Question about Black Beans

Free...I am hoping you stumble in here :)

I was watching a cooking show and he soaked his black beans then poured the whole bowl, black water and all, into his pot. He even commented ' look at all that beautiful black bean liquid'

Doesn't that black water carry the anti- nutrient (whatever it is called that makes the beans hard to digest) chemical in it? Shouldn't you rinse the beans before you cook them?

Black is beautiful ( ;) to my brown dh) but the soaking liquid should be dumped, you are correct! They will still be black! But brown is beautiful, too! :lol:

I rinse my black beans several times during the soaking process but then I do that with all beans. It's one of those things that I was taught to do but for the life of me I couldn't tell you why I do it. Y'know, like Grandma teaching me to stir one way only or you'll "unstir" it.....

My grandma taught me LOTS of things about how to cook beans to be less... er more digestible.

She taught me to bring my beans to a boil in plain water - then turn off the water and stir in a couple of Tablespoons of baking soda. Ewww :sick The water turns a disgusting green color - even with black beans! After that she taught me to rinse the beans well in clear water and then add the seasonings, ham bone etc and cook as normal.

Of course the MOST important thing she taught me about making a less ... gassy bean, was to ALWAYS count the beans as you put them into the pot. You should NEVER ... EVER cook more than 239 beans in a pot.

If you accidentally add a single bean more - then your beans will be too "farty" (240 get it?) :ep
