It actually tastes just like cottage cheese at this point, but really fresh...yummy!
I could not believe the HUGE amount of salt for that feta brine. I couldn't do it and cut it down by 1/4......my low-sodium self just could not measure 5 tablespoons of salt into anything I would later eat.
What I find really nice is that you get a chance to say everything that you want exactly how you want to say it (well, as exact as the internet can make it and hopefully you get it right before you hit SUBMIT) without having anyone butt in or cut you off.
So the lady came and met my chickens and bought them, paid me already but she will come back later today or tomorrow morning for the birds. It should be interesting rounding them up. I didn't make much, but they are costing me money and served their purpose. Today from the six birds I got one egg, and I believe that was from the one I'm keeping.
It does mean that Charlie the Roo Harper will be finding a new flock of ladies, as well as taking a few of his harem with him. I think he is going to be mighty pleased with himself. Apparently he will have a large flock. I'm sending him off with cigars. I really hate these Buff Orpingtons and will be glad when this breed is gone. They are very pushy chickens and mean to the other ones. Charlie was nice though, but I hope a few of my chickens grow their feathers back while there is no roo present to give them rooster wear marks.
Had a lovely goat walk today with my goaties, they are getting so affectionate with me. Ginger literally sat in my lap when I stopped to rest. Molly comes when she is called by her name. They got their bellies full of grass and I scoped out a great spot I want to put up a goat pen, they loved the grazing down there. Emilee is my heart, she is so loving.
I made a mock lasagna with my ricotta that I made from the whey....I can't believe how easy that was. And my feta is "brining" but I already tasted it....YUMMY! Pumpkin bread is in the breadmaker for dessert. Today has been a pretty good day.
