About the only tomato product we still buy in cans is Diced Tomatos & peppers. Trying to wean hubby off that with homemade, as it is his favorite flavor adder. I have to wonder if the BPA in our diets pre-kids is the reason for DS's trisomy 21, it is a chromosonal change, after all.

I'm reasonably proud of our biggest dairy producer, who pastures all their cows. You can drive through Kosciusko today & see the cows contentedly munching. They do still use antis & have not boycotted rBGH, though. :/

Can't get grassfed meat in stores locally. Our "Wild Alaskan Salmon" is farmed in China. Organic apples are non-existent, although I can get organic potatoes. So I'll start peeling the apples in addition to soap washing.

I've been off microwave popcorn for ages though. It's cheaper & tastes better to buy the huge bags & pop it in my cast iron skillet. Some melted butter, little chili powder & garlic, yum yum.

My biggest prolem with this list is the canned toms. I don't can and have never seen bottled except for prepared sauces.

inchworm canned tomatoes are the easiest thing in the canning world. They water bath and take almost no time at all. It would be very easy for you to package your own.

When canning in a water bath I think any huge pot big enough to give you about two inches of water over the top of your jars would work. They sell water bath kits for about 30 bucks, they usually include the enamel pan, rack, jar tongs, and the little plastic accessories used for picking up lids etc.. I think early in canning season someone even mentioned using a rolled up towel in the bottom of their pot. Really only tomatoes, jars and new seals.

I think this website has a lot of really good information. Just do some reading. You never know what you will find.

A big pot, just big enough to cover your tomatoes by 1" of water, and not even necessarily a canning pot. Glass canning jars--could be used. And lids. Plus tomatoes and water, of course. :)
