Which is an interesting question because I have tried to ferment cole slaw TWICE and my hubby has made me throw it out both times because "You are going to kill us all with botulism fermenting that stuff."

HE trusts boiling those bacteria to death inside of a little glass jar FAR more than the good bacteria will beat the bad bacteria idea. :idunno

If a ferment goes bad, I think you can tell by the odor before you eat it - right?

I'm not afraid of canning. Just haven't felt the need to yet. I don't know shy, but the thought of canned meat makes me :sick. I wouldn't mind having a better way to preserve stock though. Right now I freeze alot of stuff. Not exactly SS if the power goes out. We do have a generator for that purpose and it'll work as long we have fuel to run it.

Good video and I understand and AGREE with that. Convince hubby? Maybe. He did like my fermented pickles last year.

BTW the dude sounds intelligent and makes sense, but what is the deal with the hair? Mine looks the same right now, but I am not putting myself on youTube. If I was to show that video to MY hubby ALL he would do is look at the hair and not listen to a word.

He is one of those old souls that doesn't mind being a slob at home, but thinks you should clean up to appear in public. I constantly annoy and shame him on this one. :hide

Mom scared me with the exploding canner stories too. Even gave me her canner b/c she was so scared of it. I sat and looked at for 3 years then when the power went out here for a week and oops no generator so we lost also everything in the freezers. I learned to can the next year. I still get nervous and no kids allowed in the kitchen when I pressure can. I keep a very close watch on the gauges make sure the seal is good and its all good. Now I look at the food in the basement and go " I did that" And I stumble around trying to boil water!
Trust me if I can...can anyone can...can too!
You can do it.

That dude wrote Wild Fermentation, which is a very scholarly yet down-to-earth book. He is obviously a free spirit, lives in a commune in the woods totally off-grid. Check out his other videos. He does a 'kraut one, too. I can't wait for his follow-up book to come out. His instructions are simple, elegant, and primitive all at the same time. Perfect book for those who like to be prepared to live very primitively if it comes to that.

Yep, with fermentation, if it smells good, it is. Botulism can't grow in it because it is anaerobic and some air gets to the ferments.

If your dh would eat pickles, what is the difference in his mind with 'kraut? Same process! :hu

A book on my "need to buy" list already! Like I said I totally get it and him, but hubby would still be put off. I been with that man 32 (!!! wow that IS the number) years and he is the most logical, skeptical PITA that I have ever had the privileged to love. Sometime his logic and conservatism keeps me out of lots of trouble however, so I guess it is important.

I don't get it about the pickles either. :idunno Seems like they should also be "rotten" by his standards... maybe little steps and next Kombucha Tea!!

I already have made a hard core yogurt fan of him!! :)
