My Grandma Nettie overheated her pressure canner once and it blew out the safety valve spewing steam and scalding hot stuff everywhere. Grandma was right by it but was not really injured badly. All of the steam went straight up out the valve.

Almost as exciting as the time I watched her catch her hair and dress on FIRE burning leaves!!! :ep :th

Not badly injured with the fire, but she didn't need to pluck her eyebrows or get a perm for a while either!

Have you seen how many government recalls there are each year? Guess I trust myself and my explosive pressure canner FAR more than a Peruvian fruit picker or the forty five butt scratching warehouse workers, shippers and packers between him and me. :sick

We should get together and compare scars. I almost hurt myself trying to get the plastic edge wrapper off a quart of ice cream with a spoon earlier tonight. Thanks goodness I didn't have anything sharp on hand.

I'll admit it- I have inherited my Moms nervousness about pressure cookers. She used them sometimes, but with her fingers crossed.
I never had one and don't want to. :hide

I tried a little water bath canning. It was okay at least.

I don't need a kitchen OR a canner to injure myself. After all I have actually been graceful enough to SLAM my head in a car door .... TWICE!!! :ep :hide :lol:

Between fermenting, drying and freezing, why do I need to risk boiling my face off, destroying my kitchen ceiling or poisoning myself? With my luck, it would be all 3!

It seems if you are proficient in all of the above three you wouldn't need to. :idunno I think canning is more of a "no electricity" preservation method.

I have no idea how to ferment. I think if I had no power I could hardly dehydrate and surely the freezer would be a no go.

Wifezilla when you ferment is there a chance of food born illness from bacteria like with canning?

I am sure there is always a chance, but between the sea salt you use during the soaking and the beneficial bacteria you add in the form of whey, the nasty bugs really don't get a chance to grow.
