Quick question keljonma or me&thegals,

In that recipe for a pie crust recipe (that me&thegals gave us) she calls for oil, can I use melted butter instead?

Hummm...good question.

I usually have no trouble subbing butter for oil. It is only when you try to sub butter for lard or shortening that you get in trouble. Lard gives you a flakey light product where as oils and melted butter can make them a bit flat.

Possibly, but remember that a butter crust will possibly brown a bit more than an oil or lard crust.

And lard is what people used to make pie crusts before shortening.

ETA: Wifezilla makes a good point - I had forgotten to add that.

Probably not for a pumpkin pie. :gig

I don't think chicken fat would make a good substitute for lard or oil in a pastry crust. But I could be wrong.

Tonight's REAL FOOD meal:

Quick Bouillabaisse-Style Soup This is sooo yummy!

2 T olive oil
1 1/2 cups finely chopped onion
1 jar of home made pasta sauce (with basil if you've got it)
8 oz clam juice
1/8 t of cayenne pepper
Optional: 1/8 t powdered saffron
1 lb medium sized shrimp/prawns
1 lb white fish fillets, skinned and cut into 1 inch cubes
Freshly ground black pepper to taste
(I add 2 cups of okra too.)

In a medium sized saucepan, heat the oil over med heat. Add onions and saute 5 min. Stir in pasta sauce, clam juice, cayenne and saffron. Bring to a boil, reduce the heat and simmer 10 minutes, stirring occasionally.

While the soup base is cooking, shell and devein the shrimp.

Put shrimp and fish into the soup. Simmer 5 minutes, or until seafood is cooked through. Season with pepper and serve.
