Uses for Rolled Oats

I tried making oat flour in the blender. It works! I put 1 - 2 cups rolled oats in the blender and ran it on a low or medium-low speed. It's a bit more coarse then the oat flour I've purchased in the past, but I'll just call it "rustic". I'm more likely to sneak this flour into recipes than rolled oats. DH is fussy about food texture.

But! Before this experiment, I added 1/2 cup rolled oats per pound of meat into meatballs. They're for supper tonight!

We are doing fine. We have our neighbors living with us. They live maybe 1/4 of a mile down the road from us and they were flooded out. Luckily our house is on block and beams. Our property was flooded. I quit counting after 25+ inches of rain! The devastation around us is without precedent. Thank you for checking on me.

Glad you guys are o.k! I've been thinking of and kept an eye out for you since the hurricane made landfall.

I use rolled oats as thickener in stews, etc sometimes and also feed a bit to the chickens as a treat now then.

I grind it and use it as a breading. Either oat or half/half oat and flour. I use whole oats making meatloaf or meatballs. I like the texture better than breadcrumbs, also in veggie burgers. I use leftover oats in muffins. I also grind oats and add to pancake batter. It does make it heavier but the Wildbunch loves my pancakes better than anyone else's. I guess it's what you grow up eating.

Another vote for meatloaf. I don't use bread or crackers when making it, prefering to use whole cooked barley. I've used oatmeal before as well as wheat and rice. Wheat berries remain too chewy. Dad loves meatloaf but Mom's allergic to wheat and never thought to make it with with grains. It went over very well with the rice.

I never realised just how versatile rolled oats is. I wouldn't have thought of adding it to pancakes, bread, etc.

I am trying oat yogurt! Recipe from OATrageous Oatmeals by Kathy Hester. It's a dairy-free recipe, but I modified it to add some milk. Because I'm a neophyte! I have not made homemade yogurt in the past because "buying milk just to make into yogurt is too expensive". If this works out it would cut the cost of yogurt significantly. The cookbook says it make a firmer yogurt. I'm hopeful! My other reasons for not liking homemade yogurt are that it's too thin. And that I don't like plain yogurt. I've since figured out that my canned blueberry lemonade concentrate is a lovely addition to plain yogurt.

So do you make it with oat milk? I've often made rice milk to add to cooking or baking. Just boil a cup of rice with about a quart of water and blend the crap out of it. Strain if you please. When my grandson was sick with diarrhea I gave him this to drink. I added a little vanilla and him and GD drank it like it was good. Really cheap milk substitute. I learned to do this when I was vegan.
