I said available to us. In order to get vitamin C from animal sources you have to eat a large amount organ meats practically raw. Not very many people are willing to do that.

You are right about that, this little homestead is nestled within an old, old forest. I had to add dirt woops, I mean soil, to make my in-ground garden out of a forest floor. :)
Bigbrownhorse, ! or 2 Brazil nuts daily provides selenium. Brazil's soil is rich in it and those nuts are a very good source.
I'd love to see pics. It sounds beautiful.

Back on topic- I got a good deal on squash this week. Just had a quick soup that was so satisfying.
1 little zucchini- sliced
1 little yellow- sliced
1 green onion- chopped all but the roots
1stick of celery- sliced
1 shake of kelp granules (Maine coast container- any would work)
small handful of parsley
olive oil
curry
fine noodles
miso- dissolve in cool water and add at end.
Dragonlaurel, I buy selenium rich grass hay for the herd animals here, it comes from the other side of the mountians. Oh, see those lovely wild chanterelles up there in the photo of the week, that was taken in my back "yard". :) (You know how happy I would be to show off the rest, so let me try to upload some photos. :p)

We eat nuts like they were going out of style. I have a wonderful nut cookbook I got when I was a vegan. As soon as I unpack my books I will add some nummy nut vegan/vegetarian recipes. :)

well you said the above and to me it meant only plant sources and it can be found in meats.

Atkins suits some people. I just don't think it is the healthiest diet. But that is coming from a mostly vegetarian. What would you expect me to say?

Isn't vitamin C available in fish and/or large aquatic mammals? The Inuit people survived without veggies somehow.

Is it okay to give brazil nuts to animals? I know it is highly toxic to dogs. One nut will cause them to go into massive convulsions in 20 minutes and die.

you hit on a great topics. Nuts.

WOW I just love them and do use them salads and make things like cashew chicken and all that......of course the chicken can be subbed with non meat stuff.

but nuts are delish!

A nut cookbook....I didn't know one existed..LOL--love to see some dishes.

Yes a nut cookbook! Actually I got it for free when I sponsored "Go Vegan TEXAS" on their public radio show...I got a few others too like "How it all Vegan" etc. (Cute name hua?) Anyways now I feel like going to unearth my vegan/vegetarian cookbooks oor to share!

The name Eskimo literally means seal eater or someone that eats raw meat. They had to eat practically the whole animal raw to get enough vitamin C as well as other nutrients most people get from plant foods. Some European settlers use this against them. They called them savages. This is why Inuit is a perferred term. It means the people.

Also, they had a short life span - around 45 years - and high infant mortality rate. I am sure some of the conditions they lived in contributed to this.

I believe that is why Europeans and Asian were big on the Mustard and parsley family. Cabbage store well through the cold season and retain most of their Vitamin C after cooking. So do potatoes and many other starchy vegetables.

Also, I read in a historical journal that ale was very important in the Dark Ages - that period was quite a bit colder and had very long winters - because it supplemented their diet with needed carbohydrates in the winter.

It really lack of variety that seems to cause problems nutritionally. You have to have balance and eat from a wide source of food.

In modern days we just get fat from drinking ale. :lol: I had no idea it was once a survival strategy.
