Go for it! Come to think of it - I think I have one or two also. Can't let 'em go to waste - right? Sigh...probably feed 'em to a pig. :(

I love sweet potatoes and I'd bake those rascals -- add butter & dive in! Now, it doesn't sound appealing to mix tuna with it :idunno. The rest of the tuna cake recipe I like the sound & combo but, I'd have to use white potato or rice, etc. But :lol: I am not counting carbs. Of course, I can use plain old bread crumbs. Thanks.

Nom Nom Paleo's Polpette Di Vitello

Recipe isn't online, it's in Nom Nom Paleo "Food for Humans" cookbook. It's a fried meatball. Egg-free, grain-free. Uses 1/2 cup mashed cauliflower per 1# of meat. I used riced cauliflower. It's heavily seasoned and they don't need sauce.

My husband despises cooked cauliflower and he can't detect it. These babies aren't going to last until supper. So yummy!! This goes on my list of things to batch cook and freeze for later.

Also, a fail: crustless quiche with zucchini and carrot. Ick. No redeeming qualities, I think I'm giving up on quiche and egg muffins forever.

Making second batch of ghee today. I told DH how much money it saves and he told me to get beef fat because it costs less. *grassfed* beef fat is $7/pound though. bummer. I'll stick with the ghee. Too bad I hate the smell and taste of lamb fat. I should reach for coconut oil more often, it costs less and is good for cooking with.

I went over last "month's" grocery budget by $50. $300 for family of 4. No shame there, since half of the "month" was December before my budget started.

I did my first challenge today after elimination phase. to be honest, I wasn't planning the challenge like this, it was more a cheat, but shhhhhhh, okay? :D Food contained wheat. I thought it was fine, but nope, I'm having MCAS reaction to it, even with taking my antihistamines. Reaction is weak, gets worse when my antihistamine dose is wearing off. I'm on my rx antihistamine for overnight, so hopefully this will be over by morning?

stomachache, nausea. later, indigestion. (eww)
starting later, dermatographism, flushing, itching and burning skin in places. And of course it I touch the itchy spots, then I get the dermatographism or flushing reaction which itches more.

Naughty little mast cells!

I did an unplanned dairy challenge yesterday. Not aware of a reaction, but I went to bed pretty much right away after eating. My doctor said if I react to a food to wait 3 days before the next challenge. She also said to recheck foods I'm reacting to every 3 months. Because these aren't food allergies, it's mast cell activation. So triggers may change over time and checking periodically prevents overly-restricted diet. IDK, I'm pretty well convinced I don't need to be eating wheat, ever.

Bye, bye wheat! Personally, that would sure be better & easier to forgo than dairy. Plus, you got that out of the way right up front! Onward --- :)

I'm reacting to everything still. My "bucket" is full. Was reacting to the airflow from vents in my car, odors/unknown triggers while shopping, runny nose, fingers start itching and burning again - the beginning of dihydrous eczema. All break-through symptoms, I'm on two antihistamines 24/7. Blah. Will be over soon though. A good reminder for why I'm not eating junk food.

I started copying WP-compliant recipes out of my cookbooks and will donate/gift the actual books. Will help get my recipe book updated and full of things I can eat, rather than full of things I can't eat. While doing this, I found some compliant fruit spread recipes and added those ingredients to my shopping list. Then started flipping through a cookbook from the library, The Paleo Bread Bible. I marked so many pages! and then added those ingredients to my shopping list...

I blew my grocery budget out of the water. oh my! Grain-free baking is expensive! I won't be having these treats on a daily basis! :eek:

For supper, I made stir fry. I tried to recreate what I had gotten at HuHot. Sliced up some leftover pork roast. Broccoli, carrots, celery, green onion, canned pineapple. Cooked in a generous amount of toasted sesame oil. Bit of salt and pepper. I forgot to use coconut aminos (said to be similar to soy sauce). I forgot to make rice for family. Oh well! It was good! I sprinkled my plate with unsweetened coconut shreds and red dulce flakes. I forgot to add sunflower seed.
