Woohoo! Dairy causes lots of trouble doesn't it :( I had milk this morning because I ran out of cashew milk and my stomach, ugh I'm going to need to go shopping lol

I couldn't wear my rings in the past because 1) I would get dihydrous eczema from them and 2) even when I applied a barrier (nail polish) and wasn't reacting to the metal, my fingers would swell up by afternoon and I'd have to take them off.

My fingers don't swell up in the afternoon anymore! :clap:weee:ya:clap

Never expected that to change! cool!

I finally made sweet potato salmon cakes with boney canned salmon! I picked out the spine, and left the rest. They're good. They would have turned out better if I had remembered to add the salt.

I wonder if the recipe would work well with squash or pumpkin? That would reduce the cost of the recipe significantly.

I never had guacamole with sour cream.....maybe one of these will work. I am not aware of your limits, so some may be in these. Yes, some are more like a salsa. In fact, I make such for demos with finely chopped avocado, all the lime juice, onions, etc. and peaches chopped, vice tomatoes. If you want the creamy consistency, mash the avocados and use onion & garlic powder. The mayo adds some smooth...if you cannot have regular mayo get the vegan type.


Ingredients

2 ripe avocados.
1/2 teaspoon Kosher salt.
1 Tbsp of fresh lime juice or lemon juice.
2 Tbsp to 1/4 cup of minced red onion or thinly sliced green onion.
1-2 serrano chiles, stems and seeds removed, minced.
2 tablespoons cilantro (leaves and tender stems), finely chopped.
A dash of freshly grated black pepper.

Ingredients

3 medium ripe avocados, peeled and cubed.
1 garlic clove, minced.
1/4 to 1/2 teaspoon salt.
2 medium tomatoes, seeded and chopped, optional.
1 small onion, finely chopped.
1/4 cup mayonnaise, optional.
1 to 2 tablespoons lime juice.
1 tablespoon minced fresh cilantro.

Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.


I would think squash would work with the salmon, vice sweet potatoes. More likely, the nutrients in the potato were an added ? But, pumpkins is quite similar.

Have you ever tried roasting your veggies? This works really well with the brassicas and also sweet potatoes, beets, carrots, etc. You want to cut them all about the same size. Roasting them in the oven gives them an entirely different taste and texture. Maybe it will be a way you could enjoy them.

Roasted sweet peppers & tomatoes -- just so good!!! I'm going to find a good way to roast & can/vac freeze. I see a lot of them roasted, then in oils and jars...just going to try to work on times for processing. Probably along the lines of relish, chow, jellies...they are cooked, so good seals & acids. I love those things and they take some of our cooking "dishes" to a new level of taste. :drool I used some in my soft goat cheese, nice.

Speaking of goat cheese -- I need to re-stock that! The softs I use for lasagna & filled pasta, spreads, plus I am planning to make some hard cheese this year. First time, have equipment -- milk will flow in March! :clap It will be winter before most will be ready to use after aging. That's a year away :rolleyes::(
