Did you guys know I only have ONE stainless steel saucepan?!?! I didn't...until I went to looking for one to make my cheese :/ Anyway......

It's draining the whey now. Just a simple cheese, but my very first and I will be a proud cheese momma when it's done :lol: I used lemon juice to seperate the curd, now I am draining it and will have to add some goodies to it here shortly. I just tried it with about a pint of milk...it's what I had on hand. I haven't milked in 2 days...still with this stupid cold :th I have GOT TO milk tomorrow! But tonight, I am makin me cheese ;) I'll let ya know how it goes :)

I think I'll be able to make my first cheese in a month or so. I'm anxious to hear how yours comes out! What kind are you trying?

I did a simple ricotta and added a smidge of garlic and chives and a pinch of celery salt. It's pretty dang good! It was EASY too. :D You heat it to 180F on the stove, and once it reaches temp pull it off and add 1/8 c of lemon juice for every pint of milk until it curdles. Then you put it in the cheesecloth to drain for an hour. Once the whey is out, add your seasonings. Stores for a couple weeks in the fridge. Easy as pie ;)

no rennet or that acid stuff? just lemon juice? I didn't know you could do it that way.

I'm saving up my goats milk right now! I am not getting very much at a time but eventually I'll get enough for my first batch too.

I must say Molly did better today. I think the kids are eating more hay now and she still has the same amount of milk.

Great job on the cheese! THat's my favorite kind...farmer cheese. I love adding dill, or cilantro, or olive oil and basil. :drool

Thanks :) We like it. It didn't make much though...about a half cup or so. MUST get more milk! I haven't milked her in a couple days...too busy fightin this stupid head cold and haven't ventured outside. I have to tomorrow though. She looks like her udders are shrinking!!!
