14 quarts of vegetable beef stew
13 pints peach jam
11 pints of kernel corn
3 pints of corn in the dehydrator

Instead of getting 15 doz ear of corn this I got 20! Long story, but good!.... :th

The wife walked in the back door with 1 1/2 bushels of white peaches about an hour ago - she's going to get more sugar and adult beverages..... :p

This was the recipe I used, I have not tried it yet. I love kohlrabi too, but I can't stand it cooked. So I was hoping I would enjoy this.

Ingredients
3 each kohlrabi peeled, sliced
2 large carrots
2 each garlic cloves crushed
1 each bay leaf
3 large dill weed sprigs

Pickling mixture
3/4 cup white vinegar
1 1/4 cups water
3 tablespoons sugar
1 teaspoon mustard seed
1/2 teaspoon dill seed
1/4 teaspoon red pepper flakes
1 teaspoon salt

Directions
Parboil carrots for 3 minutes.

Mix kohlrabi and carrots; pack in a 1 quart glass jar along with garlic, bay leaf and fresh dill.

In a saucepan, combine pickling mixture.

Heat, stirring, until it boils and sugar is dissolved.

Pour boiling mixture over kohlrabi, filling jar completely.

Cover jar. When cool, refrigerate for 3 to 4 days before using to let flavors blend.

Today, more free pears!!!!! 9 pints of pear/apple sauce and 10 half pints of pear/apple jelly!!!!

A bushel and a half (or 60 lbs) of peaches. It was hot sweaty work, but it's done and nearly every one of the 35 litre jars has sealed (3 haven't popped down yet, but I'm hopeful!)

Slowly but surely I'm canning tomato sauce. Just a few pints at a time from the garden. I hope to get some tomatoes in bulk soon.

Made some pectin from the unripe apples my mom gave me, she had to cut back the apple tree because it was overhanging her riding ring, lol. Going to can some jelly & jam today and can whatever pectin is left. Also planning on canning some ham (picked up 2 12 lb hams for $3 ea.) and string beans too. It's cool enough out today so hopefully I can get it all done.

Garden Pixy, have you made the pectin before? And has it worked well? I made some years ago, and it was amazingly UNsuccessful :lol: at firming up jam. I was thinking about trying it again this year though. I started making jam again this year, and the storebought pectin is expensive!

32 pt sweet corn. Started with a pile of ears at 8:30 last night and finished at 3:30 this morning. Ran out of pt jars, which made the process take a lot longer---qt jars have to be processed for 85 min!

Never thought I'd put up 6 cases of pts this first year. But I've had to buy more jars 2x and I'm still running out. What a great summer!
