Slowly but surely I'm canning tomato sauce. Just a few pints at a time from the garden. I hope to get some tomatoes in bulk soon.

G
I usually put the tomatoes I collect in the freezer (the ones we don't eat right away) until I get a nice big batch for sauce or salsa. ;)

I did a bit of canning today ... tomatoes.

9 quarts plus 3 pints = whole tomatoes
3 quarts plus 1 pint = red Italian sauce
5 quarts = tomato juice

Made some pectin from the unripe apples my mom gave me, she had to cut back the apple tree because it was overhanging her riding ring, lol. Going to can some jelly & jam today and can whatever pectin is left. Also planning on canning some ham (picked up 2 12 lb hams for $3 ea.) and string beans too. It's cool enough out today so hopefully I can get it all done.
Garden Pixy, have you made the pectin before? And has it worked well? I made some years ago, and it was amazingly UNsuccessful  at firming up jam. I was thinking about trying it again this year though. I started making jam again this year, and the storebought pectin is expensive!
This is a first, the prices of store bought pectin (and the convenient availability of unripe apples) encouraged me to try, made 4 quarts yesterday, canned 2 for the pantry, the others will be experimented with this week. I am going to attempt jelly from grape and cranberry/raspberry juice I already have and see if they set *fingers crossed*

12 quarts of potatoes and 14 pints of salsa. A friend stopped out with marital problems and I handed her a peeler. She felt much better when we were done. And I had a surprise helper!

43 quarts and 4 pints of pickles - 7 quarts of jalapeno dills, 14 quarts of sweet dills, and the rest are sour dills.

Have to go pick up my bushel of peaches later today and probably a bushel of 2nds, to make peach puree and fruit leather with. Good thing I got this far, because I ran out of canning salt.

I bought a big box of pears. I would like to take care of those this weekend. Any ideas?
