If you have alot of ripe bananas and need to do something with them besides make banana bread this is good for canning some. Use it on toast, pancakes, bagals whatever you like.
Banana Butter
This recipe is so good and easy. Great to have on hand or for gift giving....
In a large kettle, combine:
1/2 cup Lemon Juice
3 cups Sugar
1 tsp Butter
1/2 cup finely chopped Maraschino
Cherries
3 1/2 lbs (about 10 med.) ripe Bananas mashed to
1 Mix well. Bring to a hard rolling boil. Stir constantly. Reduce heat simmering gently uncovered for 20 minutes, stirring constantly.
2 Ladle into hot half-pint jars, leaving 1/8-inch head space. Process in a water bater for 10 minutes.
3 Use as:
4 An accompyniment to ham or chicken.
5 Mix with a little barbeque sauce as and baste of meat.
6 On toast,pancakes, waffles, ice cream, cereal
7 Use your imagination!
8 My kids use to eat it out of the jar when I wasn't looking! It is easy and good. Great for gift giving....
Yield: 6 Half-Pints
Have you ever put up peach butter? It is good as well. You can use both on ice cream, bread, pancakes,etc.
Wow, that banana butter sounds great. I don't know if I will get to try it though because my kids love bananas and they don't seem to go bad around here. Sometimes I will put a few away just to make bread!!
Don't the bananas only have to be ripe or do they have to be ready to turn? I am thinking of making some tonight but maybe I will have to wait if they have to be overripe
