It was the fault of one of his work buddies. The guy brought some in. It's just simple sweet pickles.

  • 12 large heads garlic, which is about 1 and 3/4 lb (838 g) or whatever it takes to produce 6 cups of peeled cloves
  • 3 cups white vinegar 5% acidity
  • 1 teaspoon pickling salt
  • 1 cup granulated sugar

16 pints of tomato soup and 8 quarts of spaghetti sauce with mushrooms on Sunday and today its tomatillo sauce with roasted chili's getting ready for the canner.

I made Amish coleslaw today. It's not USDA approved but I'm giving it a try. Between the vinegar and sugar I believe it will last. Jackie Clay mentions it a lot in her articles. My husband and one of my sons loves coleslaw and this seems really convenient. Can be eaten as is or drain and mixed with mayonnaise. Personally I like it better without mayonnaise.

I dug out the tomatoes I froze this summer when I was too busy, and made some tomato sauce. I need to get at the beets I harvested and do something with them too.

Canned up stock from Wednesday's butchering, froze the schmaltz. The stock came out pretty and I'm pretty pleased with how the meat harvest is coming out this year. Have more to kill and can up next week...hopefully will have it done then. Will have killed around 34 birds this season for meat and stock.

I put my turkey carcass in the freezer but I sure would like to can some broth. Oh well, I've been hinting to DH for a pressure canner but he decided it's just too pricey.

Yes Bee it too would be pricey for us right now but thank you. I always thought a 16 qt. would not do up much but was impressed that it only is one qt. short of the 22 qt. size models. Something to think about anyway. I'm keeping my eye out for one at resale shops, yard sales, etc. and believe that I will have one within a few months. Until then I continue to boiling water bath, dehydrate and freeze. Of course even with a canner I will continue to do these, believing it's alway best not to have all your eggs in one basket.

Icertuche, I'd just keep a lookout for cheap or free canners along the way. I got a HUGE canning blessing a few years back and then some, just by telling folks at church I can and make my own homemade bread.

One of the deacons had his own side business of construction and odd jobs and had been given(and his wife would not use)a whole garage full of canning jars...and I mean full...he brought his whole pickup truck FULL of canning jars to my home, all sizes, ages and types and still in their boxes, mind you. He brought canners, all the canning equipment, 15 tins of red turkey wheat stored back in the 70s that were 40# ea. and fresh as the day they were put up, an electric wheat grinder and misc. other items. FREE

I spread that blessing far and wide, as I already had tons of jars and canners and such, and even gave some of the wheat away but am still grinding out of one of the last two tins here 9 yrs later, still making bread from that wonderful, wonderful wheat.

Could be if you put the word out, someone has Mom's old canner and will never use it and will let you have it or sell it to you cheap. :thumbsup
