Well, because of today's scheduled nothing is in the jar yet, but I have blueberries and lemon zest simmering for jam, and am brining pattypan slices, onion, bell peppers and fennel for pickles. Tomorrow will be busy it looks like.

One whole lemon cut in half and sliced. I sliced thinly.

Bring all to a boil ans simmer 1 hour.

I did this with no pectin and followed with a water bath. The preserves have a soft set. But taste great. Good luck and let me know how it goes. gina
This is similiar to a recipe I have for Honeyed Yellow Tomato Butter. I have never made it,..but i was told it was good,..plus I always have way too many yellow maters.

Today I was jammin' ... and making jelly too.

White GRAPE jelly 6 jars, strawberry jelly 4 1/2 jars, and blackberry jam 6 1/2 jars.

Some of it is heading to the MO State Fair on Sunday and some is for breakfast tomorrow on homemade Gluten Free bread. :drool

wouldn't you know it......more cotton pickin green beans, but i love it

10 pints of fennel squash pickles in the water bath. Blueberries, lemon zest and sugar reducing in the open crock pot until thick enough to add pectin.

I'm with you on the green beans. Done did 32 qts. and starting on daddy's tomorrow. He'll have about 70 qts.

But, I love it, too!

punkin yo have been busy, how big is your freezer?

I like that idea about the freezing. Yesterday I put 40 lbs of tomatoes in the freezer.

Agree on the freezer ! I have about 20 pound waiting for the rest to red up.

We are canning beets, beets, and more beets today! So far.....it looks like we are going to end up with at least 40 pints. :D
Green beans should be ready to pick again about the middle of the week, and THAT should give us enough to do another 20-24 quarts. Can't wait for the purple green beans to start producing!
Sweet corn should start coming on in another2 weeks. Did I mention that we planted almost two acres of sweet corn? :th
We went in 50/50 with another couple that owns the land. Had to buy a planter and a sprayer(not to mention the seed and the lime) and we worked up land that had been fallow for way over 50 years! The corn looks great so far!!!
