WHAT ARE YOU CANNING TODAY?

I canned 3 quarts pickled eggs. They sure look pretty. I've never made pickled eggs before. I have eaten them and love them. So, since FIL had droped off three 1/2 doz eggs the other day, I decided to go and pickle them.

Iceblink, I'm glad you didn't let thos crab apples go to waste. Hubby will most likely forgive the minor embarassment, when he gets to eat some of that jelly on a nice english muffin ;)
People just don't realize how much food is actually growing all around them.

I have never had crabapples in any form, but there is a tree bearing tons of them just outside the gate (we live part time on a military base) so I asked the guards if I could pick them. They were suprised and my husband was so embarrased that everyone driving in and out could see me picking them, but the jelly turned out delicious, and such a pretty color too!
Recipe please for your crabapple jelly, I have a lovely crabapple tree filled with crabapples!



Do you remember the teacher in "The Simpsons" her name was Mrs. Crabapple, but they pronounced it "cra-bop-ple"! :lau So around here when you are grumpy, you get called a "cra-bop-ple".
 
Realized why I am so tired - my thyroid medication ran out a while back ! Duh.

Okay, slow canning day today. Went to get more Elberta's from the farm stand, and had to ORDER them for tomorrow !!!

Had some "meh" peaches, so combined them with apples and ended up with 9 pints of appleeachy sauce.

Second batch of beef is deep pitting in the crock pot, and will can it in the morning. I have 10 pints already, and this is half again as much. That's going to be awesome. SO beats freezing.

Last of the 40 pounds of tomatoes. Out of the freezer, they didn't peel well, dang it. Must be because they were Roma's. So, blanched them, peeled them, and am making catsup. Should end up with four pints, I think.
 
Last night i canned, 7 pints and half pints of Pickled Jalapenos, 1 pint of Pickled Banana Peppers and 5 jars of pickles.
 
Ldychef2k..........can I please talk you out of your recipe for the "appleeachy" sauce? Purdy Please?? :frow


Does anyone have a recipe for peachsauce??
 
Thanks for not asking for accuracy ! That's not the way I roll !

I had about 10 medium to large sized peaches and a three pound bag of apples. Peeled and pitted the peaches. Cored and sliced the apples, but didn't peel. I wanted a rosy color to the sauce, and I like the texture.

I just put them in a pan with about 3 Tbs of lemon juice and sugar to taste. For my grandkids, they like sweet, so I used about 3/4 cup. Then 1/4 teaspoon ground cloves, 1/2 teaspoon cinnamon, and about 1/2 or less of ground ginger. Simmered for an hour or so. The apples (didn't say on the bag what kind they were) became "mooshy". Then I used my stick blender and turned it all into a nice rose peach colored sauce. Then just canned as usual.

A couple of the peaches were on the green side, but the rest of them were dead ripe, so the flavor was pretty good. Not elberta good, but good !

Today was pickled beets, and green beans. I had half a jar of each left....sooooooooo, I threw them together..and will have pickled beets WITH greenbeans! :/ Dont know if its something we will like...but I just didnt want to waste a half a jar of each! :D
Tomorrow....2 dozen ears of corn....I LOVE canned corn, I HATE canning it! 55 minutes for pints! :/ Makes for a long day...when you do 3 or 4 batches. ( I have a small pressure cooker.)
We have 30 pints of corn done...and this should give us another 15 pints. Hmmmmm, there are 52 weeks in a year...I think I may be short a few. :rolleyes: Darn it! Im shootin for 60 pints of EACH...corn, green beans, pickled beets, and hopefully peas. Thats IF the fall crop of beets and peas make it. :fl

You'd think beings im from the dirty south i would have eaten pickled eggs but i haven't, would you give me the recipe for the eggs so i can try them, does it matter what size egg to use. by the way i canned 10 more quarts of heirloom blue lake green beans, 5 quarts of tomato sauce, bell peppers, and a gallon bag of cut okra.

Absolutely! If a person is willing to swallow their pride and dig in ditches, ask permission to pick on other people's property and otherwise forage around, it's great what you can find to eat!
