I haven't been able to find any canning recipes for strawberries besides jam on any University Extension site. We are not fans of strawberry jam and don't do any alcohol, so does anyone have any canning recipes to share for strawberries? Syrup, juice, pie filling etc? I have 10 lbs of strawberries to process and have already washed and frozen 5 ;)

Strawberry syrup.

1 cup water

1 cup white sugar

2 cups crushed strawberries

1/4 box pectin

1 tbsp lemon juice

Cook berries and water until just soft. Blend with either immersion blender or regular. Add lemon juice and 3/4 cup sugar. Cook until at least boil. Mix pectin with 1/4 cup sugar, then add to berries. When back to firm boil, start timer for 1 minute.

I always add lemon juice to all fruit now as I found it helps maintain color.

Works well with yogurt and with other things.

Yum, thank you!

Do you can (water bath), freeze or just keep in the fridge?

Those berries would be good on pancakes or pound cake! 😋

Green beans were $1.68# at groc this week. So 🤷. Think 50-60# a bushel...
Can you grow at your plot? They are really fast maturing...60 ish days.

Waterbath. Im making some half pints up for Mom tomorrow. I use pints for us. I need to make us jam as well.

You can also just crush the berries, but we like them better blended.
