I cold pack and then I make sure the steam vents HARD for a good ten minutes. Then I figure it is now hot-pack ;)

I have had a number of occasions to do one more batch would mean I was up until the wee hours, like 3 AM. So, I have put the prepared jars in the fridge, and then in tthe morning brought them out to room temperature for an hour or two, then into cold water in the canner, starting to simmer as low as opssible, then slowly bring up the heat over about three hours to almost boiling and then put the lid on and start the venting. So far, I have not died. I am sure that is a comfort.

I've got applesauce going today. I have two cases of apples bought from a local store at .33/lb. and have a raincheck for two more cases. :) I used three quarts of apple pie filling yesterday, so I'll be making some more of that soon, too.

FF, you are being so generous. Thank you for those kind words. I am the kind of person who throws herself completely into a project, so in lieu of years of experience, I have just done a lot of reading and taken a few risks that haven't killed me...yet. This forum has taught me more than I could ever offer in return.

I have three quarts of chicken broth for us, leftover from making catfood, in the canner along with three quarts of mashed chicken bones and such for the hens. I've never canned it, I usually freeze it. Freezer space is at a premium, so I hope this works. Should. I hope to have enough after making a year's worth of catfood in the upcoming weeks to give the hens a quart of meat/bone scraps each week during the winter bug-free months.

All the broth sealed and NONE of the hen-food sealed.....grrrrr! I suspect it is because they were refrigerated overnight, and maybe they didn't get hot enough.....?

Today I put up 12 half pints of cranberry orange jam to go in the gift baskets I am making for my family. Tomorrow I am picking up some FreeCycle jalapenos and think I will make jelly with them so I can have a red and a green.
