WHAT ARE YOU CANNING TODAY?

I have been canning soup each week all winter. I made mostly vegetable beef, chili, and bean soup. I have also made chicken, pea, and french onion. We have a wall of cabinets as our pantry. There are 9 regular upper cabinets on the wall. My goal is to fill 6 of them before spring gets here. I have about 5 or 6 canner loads to go to fill them up. I have an All American canner that holds 14 quarts in each load, so I still have a bit of work to do. But it looks like we are going to see some spring like weather this week, so I better get busy.

Oh yes! I am following the Ball canning book. My wife and my friends all get a kick out of an old big burly guy spending his time cooking and canning in the kitchen. But they never mind when it comes time to share in the bounty.

We are having a pot luck at church tomorrow and everyone wants me to bring the pot. That is a pot of my chili that is...

Yum - that sounds delicious!

A nice stash of ready to go meals can't be beat. It's a busy time on the farm for me and being able to grab a jar of something easy is appreciated. We had some home grown, home-canned green beans a couple days ago and they were absolutely delish. Gotta get seeds in the ground soon because the stash is getting low!

The wife has been devouring the canned chicken. She prefers my chicken salad recipe over hers (????). Down to 6 pints. We have 30 lbs frozen in the freezer because of the electric canner fail. The butcher shop has skinless boneless breasts on sale in mass amounts. May need to drag the big canner out and get the new propane burner started in the garage. Supposed to be in the 50s Sunday
Mass quantities of local fresh chicken purchased today. Propane tank filled up for the canning burner. Busy busy tomorrow

i've been cooking and canning from a young age, and yes a guy, also know how to sew and considered learning tatting, but that didn't happen. i currently do almost all of the actual running of the batches of jars through the sealing up and do most of the gardening here and Mom does her best around the edges. we no longer can a lot of what we used to can because we weren't eating it and the person who enjoyed most of it could also no longer eat a lot of it, so we just concentrate on the things we do use a lot and that is working fine. :)

i grow a lot of beans and we eat a lot of them fresh steamed. yum! i also like them cooked from dry which is how i prefer to have them stored.
