We had about 8 lbs of Mr Stripey and German Johnson tomatoes leftover from market yesterday. I sliced them and put them in the dehydrator this afternoon.

Quick question: Can I dehydrate different herbs together?...like a type of herb for each rack or will they all come of tasting the same as each other.

You can use old sheers to cover your food with. The sun gets thru and keeps bugs out.

They will be OK. I usually do garlic and onions separate however.

Herbs usually dry so fast they don't really cross contaminate each other. If I have a lot of herbs I usually put the largest part in a jar in the freezer and only keep out a small container for what I currently need to use. Try to crush them as little as possible when storing. The freezer makes the herbs stay fresh and the flavor last so much better.

I do a lot of tomato powder every year. It really comes in handy when you need only a little bit of tomato sauce, paste, etc., and don't want to open a whole jar.

I also do zucchini powder - that is good as a thickener in soup.

Thanks! Neat idea! I may try that and see if I like making tomato paste that way.

Thanks for the tips on pasteurizing. We usually have so little humidity mold isn't an issue. This summer has been unusually soggy.

My tomatoes molded in the dehyrator. TOO humid. Will try again, the weather is way more reasonable now!

I just cut a bunch of cherry tomatoes in half and put them into my ancient dehydrator. It is a bit humid today, but I didn't really want to store them any longer. I may stick the trays in the car to finish tomorrow while I'm at work. I don't like leaving the ancient machine running while I can't supervise it.

Can I do tomatoes in the oven? Mine doesn't get very low (I think 180) but I could leave the door open. I have dried horse cookies at that temperature, but I don't think tomatoes would survive it.
