I am drying oregano, lime basil, zucks and going to try cukes.

My drying apples went moldy. I am not used to it being humid and instead of turning on the oven I tried to let them air dry. Of course all it has done since I prepared them is rain. Lesson learned. Grrrrrr

Yesterday I dried a few things to enter in the fair. I did a couple of tomatoes, a squash, and some peppers. I'm just not sure how they want them....in rings? That's how I did my peppers. I think I'll cut them in thicker slices next time, because once they dried they were incredibly thin. Also, the tomatoes stuck pretty badly to the rack. I'm wondering if I should turn them while drying? The squash turned out lovely! Perfectly dried little rounds. :)

Vivki- mashed sweet tators, now that sounds interesting, how do you do it and how do you use them,enquiring minds want to know, thanks in advance for info

For sweet potatoes: cook, peel and mash them (don't add butter or anything). Then roll-out portions that will fit in your dehydrator between sheets of wax paper (like pie dough), and flip them off the paper and onto the dehydrator shelves. When dry, break the pieces to fit into jars or whatever you use.

When you want to use them, just pour boiling water over them. They re-hydrate fairly quickly.

More tomato leather, okra and sweet corn. I was given a full crate of corn, maybe 40 ears. After I culled the ones that weren't filled out, cut it off the cob & dried it, it fit in two quart jars.

I am keeping this idea for sure! I LOVE mashed sweet potatoes!

When you rehydrate them, they taste just like fresh.
