Add in some of the bottle stuff. I did that once when my "Mother" culture was a bit old and the results were really good. My friends asked if it was on steroids. :lol:

My lips burned for a long time after a taste of yellow mustard the size of a grain of rice! I can't imagine any self-respecting mold spore would dare to grow in such an environment, so maybe I will leave a little jar out and see what happens.

I wonder if I can cut it with something mild.....bean paste?

O.k you gals, send me that spicy mustard this instant. My pallet has been forever singed by Tex-Mex food and ready for some much needed "heat"!:D (Western Washington food has been a bit bland...don't tell anyone I said that!)

No, really it does sound very good! :)

The salsa is bubbly and ready to refrigerate. It is DELICIOUS!!!

None of that over cooked taste I associate with traditional canning. Very fresh tasting.

I had a coworker who used to make cucumber salsa that was rather tasty. Fresh it was great. Canned it was horrible. Now I HAVE to find out how it will taste lacto-fermented!!!

This recipe seems similar to what Buffy made...

Ditto!

Thanks for the cuke salsa recipe, I have all the ingredients except "Lime Pee!" I will substitute lime zest and hope it comes out ok. :D
