Sounds delish

it turned out good as expected. i may finish off the portion for breakfast that i don't have in the freezer. it's calling to me now...

i bought a 2lb chunk of chuck roast and chunked it so it was chunks of chuck simmering in coconut milk and a little butter for a while before i added the spices. let that simmer a while longer and then at the last added the onions (i don't want them mushy) and simmered until the onions were just cooked but not mush.

the spice i use is a simple can of Maesri green curry. so one can of that along with a can of coconut milk and then the meat is the right amount of heat for me (but some people might think that is too much so if you try this use part of a can of spices at first and then adjust...).

Yesterday I had chicken breast fillet with pineapple, sweet onions, soy sauce, etc. nice change and I'll have some for breakfast -- before freezing another meal of it.

I have a 5# pork belly I'm wanting to cook, maybe today since it's a cooler day...won't be problem with heat in house. 🤔 More of my use from freezer. Those two huge turkeys will prob be in there until Fall 🤐

I thawed two vac pac'd packages from '22 of chicken thighs. Son put them on the Weber. So good!

He had two; hubs and I had one. I told him that pieces of meat are a treat and that we try to fill up with other good things. Like the baked potatoes, the home grown/frozen green beans, and the salad that accompanied the meat.

Last night took a leftover steak, thinly sliced it, added to sautéed peppers and onions, added some soy sauce and made a basic stir fry.

I always used to keep some frozen stir fry veggies in the freezer just for quick meals. Cooked frozen chicken or steak go well.

i had a can of spaghetti-o's (and i also ate them right out of the can cold), then i had a piece of homemade bread and butter. i'm probably going to have one more peanut butter cookie with some milk this evening too. massive carbs today as i also started with a bowl of bran cereal and a cookie. the cookies were given to us by some friends and as Mom does not make peanut butter cookies they are a special treat for me.

yesterday was bean burrito day. i made a large pot of them over last weekend and froze some of them, but also left a jar in the fridge because i knew i wanted burritos this week. cheese, beans, cherry tomatoes (cut in half), whole milk yogurt (i like this better than sour cream) and then Western salad dressing along with some sriracha hot sauce. i made it extra big because i'd been busy enough all day to be really hungry plus i really love a good bean and cheese burrito...

Mom just said she's going to warm up some froze veggies so that will go well with the cookie as dessert. i think she reads minds since people are talking about frozen veggies. i had to go play backup, catcher and holder while we were digging the veggies out of the freezer... :) no toes got things dropped on them so we're golden. :) :) :)
