Please help me cook this fatty bone in 4 pointer buck hind quarter. It's frozen solid right now. I just moved it to the refrigerator and will cook it next Saturday. Only one problem I don't know how to cook it properly.

I would like to season and smoke it over some cherry wood some, then move to the oven it finish it off. It's freaking huge and I dont want to waste any of it by not cooking it right. I mean I don't hunt, skin, clean & process for the fun of it. Please help me!

Have you any curing salt? I would put in in a brine cure until next Saturday.
