It's a lovely clear day here, cooler in temps than we've been having...just gorgeous!! Today I had a huge grilled chicken taco salad..since getting my little countertop grill I've been noshing on lime marinated chicken breast in various recipes, but the salad is my favorite.
Our salads have romaine, broccoli, celery, green peppers, sugar snap peas, pak choi, and onions, all cut up fine, so it's quite a packed salad. Add pico de gallo sauce, sour cream, cumin, creole and other seasoning, jalapenos, tortilla chips and the grilled chicken. Pure bliss and quite filling.
We splurged today with New York strip steaks on the grill, topped with creamed morels and a salad with two kinds of lettuce from the garden, cucumbers and fresh beets with a homemade ranch dressing. Dessert was a keto version of Paula Deen's Butter Cake.
