One of my favorite "easy" meals is "Creamy Italian Chicken". The recipe can be found on the back of the Hannaford dry Italian dressing mix box. SO, SO good! Last time I made it, I added carrots. I usually serve it over noodles or rice.

Buddha Bowls - red beans (usually I use black beans, but I wanted to get rid of some of the red beans in the freezer), taco seasoned meat, lettuce, avocado, shredded cheese, pumpkin seeds, chopped peppers, sour cream or yo cheese...and DH will have a few Tostitos stuck on the side of the bowl.
Lettuce (or rice) in the bowl, topped with protein in the middle, something white, something colored, something crunchy, something creamy - all in blops around the edge of the bowl.
