Tonight we're having BBQ chicken pizza. There's no real recipe - I use boneless chicken thighs for more flavor. Cook and add to your favorite BBQ sauce. Spread a bit of BBQ sauce on your crust, add the chicken/BBQ sauce, thinly sliced red onion, chopped bell pepper. Top it with some grated cheddar or cheddar/jack. Pop it in the oven 425 for 15 minutes or until it looks done.
Tonight I'm using two small-ish cauliflower pizza crusts, last time they were done in 15 minutes.

Our local supermarket has whole ducks marked down at the moment €6 a piece. Since I stopped eating chicken I swapped their meat for duck or turkey when I make pies and duck and mushroom pie is absolutely amazing! I've been clearing out the freezer this week, so I'm thinking duck pies and some for the freezer for those days when I don't feel much like cooking.
Dinner tonight is a traditional S.A. dish, vetkoek with beef mince. Which reminds me, I need to go check on the dough!
My wife cooked and eat like a king, everything delicious. Pork Chopper boneless pork roast, Amish child made bread, last years garden potato, broccoli and American Golden Wheat Homebrew. Yummy yummy yummy for my tummy tummy tummy
