Last week I cut up 50 lbs. of onions. I peeled, cut off the ends, quartered each onion and put it into the food processor with the dicing blade. Of course, that was far more than could be put through even a large dehydrator in a day, so I had many bags of onions to store in the refrigerator until they could be dried. Even with the food processor, it was a huge chore and rough on my wrist and arms, but it was not so bad on the eyes doing it this way. Also, I did it all outdoors on the deck, which helped also.

Yes she will!

Remember the good cook always starts peeling the onions - then decides what is for dinner!

I usually do large quantities every year. They are easy to use and store well. They take up less storage space dehydrated in a canning jar as well.

I love to buy those big bags of onions that the Shriner's sell - just for drying.

I am helping a charity and filling the larder!

Also refrigerating the onion - before chopping them is supposed to help with the burning eyes.

Well, it is a chemical in the onion reacting to the saline in your tears and becoming an acid that causes the burning. Swim goggles may look silly but they will prevent it getting into your eyes.

I did not know the Shriners sold onions.....I thought they just had circuses!

The Shriners in our area have a big Vidalia onion sale every year for charity.

They sell onions in 20 or 25 pound bags.

Uh, well, I'm not sure I'll use it all and not sure you should be impressed. :hu

It was just such a bargain. And then after I bought it, I felt like I couldn't let any of it go to waste. Now I've just got to get in the habit of throwing some in whenever I make spaghetti, chili, soup, etc.
