I have to cook today, as we leave fairly early tomorrow to head to my parents' :) I am making an enormous salad with spinach, purple choy and heirloom lettuce, squash rolls, cinnamon ice cream batter (to be frozen at mom's) and something snacky that I haven't decided on yet...

I'm doing my low carb stuffing today, and the cranberry sauce, and the chocolate pie (minus whipped cream).

My mom is picking me up right after work tomorrow so this is the only chance i have - after work tonight!

Hey abifae--How do you do low-carb stuffing? It sounds intriguing! And the chocolate pie sounds like something I'd like to stick my face into :D

Mmmm.... That sounds really good! Also looking forward to my uncle's version with apples and bacon :)

I ought to be making cranberry sauce today b/c I seem to have given away all my jars of it :p but am too busy with other things. Also KILLER tired, since Mon and Tues were the last warm days of the year so I was real busy doing roof repair, ditches, moving dirt, processing turkeys, etc. "Fortunately" my husband's car was in the shop yesterday (who knew that these days it costs $600 to have yer starter replaced? yowza!) so he was home to watch DS#2 so I could do unpleasant hard work alllllll day. I am *so* sore.

Frankly I'm not excited about cooking *tomorrow* either, but it's just for us (obviously most other people up here do not celebrate American thanksgiving - the Canadian one was a month and a half ago!) and I am figuring that the number of side dishes is negotiable depending on how much energy I have :p

I am not sure whether to cook one of the turkeys with excellent meaty conformation but the connective tissue was *really* tough when I was cleaning 'em so I'm worried the meat may be tough, or whether to cook one of the easier to clean but less meaty Narragansetts. Dunno. I got til tomorrow to decide :p
