Thanks everyone - they were great!!

I was so envious of everyone on OFGs thread- sitting with their feet propped up in front of a fire... *sigh*

So I planned to go curl up and watch some Dr. quinn. Instead, I took my camp chair and sat out in the garden so the chickens could get in there. I let Pat out and she stayed right with me and Rio so that Poppy wouldn't bother her.
It was about 50* with a light breeze.... so instead of fires and warm socks or slippers, I have a sun hanging low in the sky, chicken TV and crocs :p

I am not posting a picture of my feet. I don't care how warm it is here no one is gonna want to see my toes!!!!! :lol: I wore flip flops all day.

your chickerdoodles look like their having a nice romp.

Maybe I should post a pic of my feet w/the one pair of slippers I have. They're either wolves or huskies.

hehe I used to have a pair of "bear foot" slippers... wonder where those are??? hmmm

At any rate... everyone has enjoyed the doughnuts! My mom said she was amazed that I am cooking and enjoying it, but said she sure wonders if I am ever going to cook anything "real" :gig
(all I have done is preserves, bread, doughnuts, etc).

SO..... any EASY and cheap recipes for chicken, steak or turkey? I have my meatie chickens, some sale turkeys in the freezer, some ground beef and I think a couple of decent steaks ( I can grill ;) ). Veggies I can get fairly reasonably at a stand near my house, but just basics (tomatoes, lettuce, etc)


ETA - and by EASY I mean VERY BASIC and EASY :)

OK, here's a quick, easy recipe for either turkey or chicken soup.

3 quarts chicken or turkey stock
2/3 cup rice-either brown or white, NOT quick cook rice
10 oz chopped frozen spinach
onions, carrots and celery to taste
2 cups leftover chicken or turkey
salt, pepper, etc to taste

Put stock in large enough pot. Add the rice, then turn on the heat. Add spinach.

While this is cooking, cut up your veggies, add to pot.

Add everything else. When the rice is done cooking, your soup is done.

For a quick, one pan dinner

2 tbs oil
2/3 cups rice
2 stalks celery cut thin
1 onion, sliced
garlic to taste
1 pint chicken stock
2 tbs soy sauce
2 cups either leftover chicken, turkey or pork
16 oz frozen broccoli florets

In large skillet or wok, heat oil over medium heat. When oil is hot, add your rice, onion, celery and garlic. Cook until the rice is browned. (It will kind of act like popcorn while cooking.) Stir frequently.

Once the rice is browned, and the veggies are soft, add everything else. Cover and turn down the heat. Stir frequently. (You may need to add a bit of water.) Dinner is ready when the rice is cooked.

Turkeys are really easy. I had always eaten them after they had been cooked by other people, not sure why it looked hard to me.

I have cooked my first two turkeys of my life this month and I'm 51! They both came out awesome and I didn't do much except put it into the pan! I just rubbed it down with some oil and salt, pricked the skin and baked it at 325 until done.

I am NOT a cook and my turkeys came out fantastic. I was almost giddy that something that I always thought was so hard was actually so easy. Don't be afraid! Some of it isn't as hard as it looks.

Make a big ol pot of soup. You can find some really easy soup recipes out there. I usually do veggie and then add some precooked chicken shredded up or some cooked hamburger.

Easy...

1 64oz container of tomato juice...you can use V8 if you like
1 can or jar of diced tomatoes
beans--canned or dried that have been quick soaked or soaked overnight--whatever mix you like or have on hand
2 bags of frozen mixed stew veggies or whatever veggies you have that you like--corn, peas, potatoes, carrots, onions, green beans, celery, whatever you like and have on hand
2-3 big bay leaves
1-2 cups of chicken stock, beef stock, or vegetable stock depending on what meat you put in
salt
pepper
whatever spices you like--I use marjoram, thyme, oregano, basil, parsley, garlic powder if you don't have fresh cloves, celery seed, red pepper flakes, just dump some in and see what it tastes like.

Let it simmer all day stirring occasionally and then serve when you can't stand it anymore. Makes the house smell good!

I know lots of people that make a "leftover soup" using frozen leftovers from previous meals....if you don't have enough of something to use for another meal put it in the frozen baggie and then when you have enough make soup with it.

I always make a big batch of soup so I can freeze leftovers or can it for later.

Why not take some chicken breasts, sprinkle them with seasonings (or just salt, pepper, garlic) and fry them up in a pan with a little olive oil - or grill them since you're good at that. The, put some veggies like peppers and onions or green beans and carrots in another skillet with a couple Tbs of water and steam them.

If you want a full out grill meal, cook the chicken on the grill and cut up some potatoes into quarters. Take a long, retangle peice of tin foil, drizzle a little oil onto it and put the potatoes on one side. Doctor them up with spices and fold the other half over to create a little tin foil bag and fold the sides closed. Cook them on the grill for about 20 min, flipping over 1/2 way through and you've got a meal! You can do the same with veggies, too - even summer squash - and have a great meal!

I just made awesome red and white venision lasagna with spinach, green peppers and onions. Dang...now I'm hungry for leftovers!

ETA - Look up Beer Can Chicken (if you've never heard of it before, that is!). Great way to cook a full chicken or turkey on the grill!
