Roasted chicken

Wash and pat dry a whole chicken. Rub it with olive oil and be generous with the salt and pepper. Shove some herbs and or veggies inside....quartered onion, celery, lemon halves, thyme, rosemary...what ever you have on hand that floats your boat.

Toss some chunked up veggies ( a little bit of whatever you shoved inside the bird) on the bottom of a roasting pan (or a rectangular cake pan) and set your bird right on top.

Bake at 325 for about 2 1/2 hours covered with foil...uncover for the final 30 mins or so.

Pair it up with roasted root veggies ( chunk up and toss with olive oil, salt and pepper, grate some lemon zest in and use whatever herbs you used with the chicken) roast on 425 for 45 mins or so.....or squeeze in with the chicken @ 325 for 45 mins then when you pull out the chicken to rest, crank the heat up to 450 on the veggies.

Thanks everyone!! These look like an awesome start!
I did google the "Joy of Cooking" several of you mentioned. What version would you recommend? They have them from 31 (replica), 56, 64, the 90's and an '06?

I had to have a filling replaced today and I am not sure it "took". Wow it is hurting. I have to go back in a couple of weeks to have 2 more done, so I will check with them then.

Mr. ON came over today and cut my seed potatoes for me, showed me how to do the rest. He also talked about how they planted potatoes "on the farm" and asked to visit my chickens. He LOVES my hens. He said if I want to I can put Pat in his big spare pen - all grass, big pecan tree, small house.. but he loses so many to hawks.
I tried putting a couple of eggs in her nest she'd made (still not laying) and she wouldn't even go in the box anymore. I'll try golfballs next, in case she is afraid of getting on the bad girls eggs.

I was getting all crazy over on poor SD's journal posting pics... so decided I better get back over here lol

Buford and his best buddy, Elmo. Elmo is another animal my vet pawned off on me. Somebody found him as an approx 2wk old kitten in the county landfill. I bottle raised him - with Buford's help of course. Now they are old friends at Buford 14 1/2 and Elmo 12.

ETA - her ear is all wonky because she had a hematoma during Hurricane Ivan. Nobody had power to do the surgery so it just healed on its own

Molly - I rescued her from my brother. She was so starved you could see the pits in her skull. First vet visit they pulled 6 teeth that were so rotten the roots were exposed. She was not a candidate for heartworm treatment because of so many issues, and she was put down at age 10.... but she had 4 years of being spoiled rotten.

Buford, Matilda, and the bulldog x is Brutus - he was rescued along with Molly, but was in a little better shape. He died 2 years ago from a rapidly developing tumor in his abdomen.

Wow! What a beach. You can post pics of your dogs in my journal any ol' day you like....I love it.

Try taking ibuprophen for the tooth...I used to work for a dentist. Sometimes the nerve gets a little irritated when they work on it. Try not to chew hard on it or drink hot or cold and get it over there for a couple days. If the gum hurts try rinsing in warm salt water. But ibuprophen is very effective for toothaches.

Deb - we have a state forest filled with creeks and rivers with the gravel or white sand banks. They have COLD water and are used for canoes, kayaks, tubing... or just hanging out which is what we do. Something that may interest you is that there are also stables in the forest, surrounded by these creeks. They have several marked trails, from just a mile or 2 up to several miles (I think 21?).

Thanks, SD ... it did help the general soreness. It is still pretty sensitive to cold though. Hopefully it'll feel better in a day or 2!

Sure, Gina, you're welcome to it. That is from Pensacola Beach in early Spring.

I had hoped to get my onions and peas in the ground this weekend, but looks like another crazy couple of days. Maybe Thursday I can get some done before work.

HA thanks, OFG! Buford was about 12 then, and he had followed the boys upstream, through the woods, all over the sand bar. He finally just crashed.
He is such a great dog - I took the pic of my 9 yr old nephew taking a photo of Buford, and Buford posed so sweet. Nephew won 1st place for the photo at our fair!

What a contrast in your photos. The first ones look like a beach paradise and in the others.....................paradise is lost. Wow.
