That is a good question.
Are you referring to the high carb content? Or the high Fiber?

Heated coconut is no longer going to have an "anti" affect.

A quick note also, coconut is VERY high in phytic acid. Best to soak it prior to baking.

Looks like coconut is on the do not eat list.
Its on the may cause obstructions list.
But! It does not specify what preperations.
I would certainly think coconut oil would be just fine.
But any other part, including flour would likely be an issue.
