I remember early in the Spring, Grandma would always come out to our place with her little dandelion digger and bag and fill the bag. She would take the smallest leaves, clean them, and cook/wilt them in hot bacon fat. She said that used to be their first fresh greens of the Spring (couldn't just buy lettuce like today).

It's a unique taste, but if the leaves get too big, they get bitter. :sick

Veggies are just decorations for the roast beast. :lol:

I could eat kraut cold from the jar. But, it's *always* better covering a nice pork roast, or kielbasi sandwich, or corned beef, ..... :drool

Funny you should say that...I LOVe cold kraut from the jar!!! As long as it's homemade, the commercial crud is too salty ;)

I just looked it up:
Dandelion greens are high in vitamin A and C and have more iron than spinach. Dandelion greens make a terrific salad and when cooked, are an excellent serving portion of greens.

I think I remember her adding a splash of vinegar.
