Homemade Breakfast Cereal

About This Recipe

"Based on traditional food preparation techniques. From Eat Fat, Lose Fat by Mary Enig and Sally Fallon"
Ingredients

o 6 cups whole-wheat flour or 6 cups spelt flour, freshly ground
o 3 cups whole milk, preferably raw
o 1 cup water
o 1/4 cup homemade whey
o 2 teaspoons baking soda
o 1/4 cup coconut oil or 1/4 cup butter, melted
o 1/2 cup maple syrup
o 1 teaspoon sea salt
o 1 teaspoon pure vanilla extract
o 1 teaspoon ground cinnamon
o 1 teaspoon pure maple flavoring

Directions

1. In a large bowl, mix flour with milk, water, and whey.
2. cover and leave at room temperature overnight.
3. In the morning, preheat the oven to 350 degrees and add remaining ingredients and more water if needed to make pourable batter.
4. Prepare two 9-by-13-inch baking pans with coconut oil and pour half the batter into each.
5. bake for 30-45 minutes or until toothpick inserted in center comes out clean.
6. Remove from the oven and lower temp to 200 degrees.
7. Allow cereal to cool and crumble onto baking sheets.
8. Bake until completely dry and hard, about 1 hour.
9. To get a uniform size, process briefly in batches in food processor.
10. Store in air tight containers at room temperature.
11. Serve with raw half and half or cream diluted with some water.
12. Allow cereal to soften slightly before eating.

And I like OFG's idea of using milk instead of water....in this recipe, I'd add the milk the next day instead of adding more filtered water.

Oatmeal cooked this way is delicious! You can also add raisins or chopped dried fruits to the soak the night before. I did this while in school when I was 19-20, not for traditional reasons, but for speed of preparation in the mornings. Back when leaving things out was a big no-no....oh, wait, it still is! :p

Paleo "cereal".

Basically it is all the really good stuff you love in cereal (berries, nuts, etc...) without the sugar-filled evil flakes of death.

Paleo Cereal Recipe:

* blueberries (I went organic, they were on sale nice!)
* strawberries (again, organic)
* raw walnuts
* raw almonds
* goji berries
* unsweetened almond milk
* cinnamon

This would kill my digestive tract, so if you have a sensitive colon and want to make this, soak and dehydrate the nuts first, as described in Nourishing Traditions.

Scrambled fresh eggs and spinach...our new favorite... On a cast iron skillet, so clean up is a snap. :D

I have berries throughout the day, mixed with soaked, crispy almonds and brazil nuts, YUM! Oh, now we can have raw milk...

Oh, in the past I have made my pre-soaked, steel cut oats in a thermos. Just pour boiling h2o over the oats in the thermos at night, enjoy in the morning. :D
