Breakfast ideas: Alternatives to extruded cereals

Anyone have quick nutrition info on coconut flour? Especially carbs as compared to wheat flour? Thanks!

You only use 1/2 cup of coconut flour for a whole batch of pancakes (makes 1 dozen small pancakes). Even on a hungry day during a moment of hormonal derangement I can't eat a whole batch :D

About 3 of those babies and I am stuffed.

Surely flaked grains are just steam and rolled, aren't they?

ETA: Oh, I see, you meant flakes as in *corn flakes*, right? Not flaked oats for porridge.

Yes, corn flakes and such, not oatmeal, rye flakes, etc that are just flattened grains.

The only breakfast cereal I know of that is not supposed to be extruded is Grape Nuts.

Organic extruded cereals are much more neurotoxic because organic grains have more proteins and more damaged proteins means more neurotoxins. Sheesh.

We got an oat roller, and roll our own oats as often as possible (groats can be difficult to get sometimes). The flavor is much more complex, and far better than commercial rolled (aged) oats.

You can also use a hand crank wheat mill to crack wheat for hot cereal.

My regular breakfast though, is a shredded potato (skin on if I am well enough to handle the skin), fried in butter, with an egg scrambled into it. I sometimes add a little meat, garlic, or chopped kale if I need it that morning. Pretty fast to fix.

I'm coconut intolerant, *any* coconut makes my tummy cramp and then explode.

My pancakes, mmm!
1 tbsp almond butter
1 smashed banana
1 egg

Smash, mix, griddle. Topped w/ local sage honey, yum!

I also make these up in bulk amounts to keep on hand.

Instant Oatmeal mix-raisins and spice

10 cups quick or minute oats
2 1/2 cup raisins
1 2/3 cups brown sugar
1/4 cup cinnamon
1 1/4 teaspoon nutmeg
1 1/4 teaspoon salt.

Mix together, scoop portion and add boiling water or hot milk to your preferred consistency. (this recipe can be reduced. i think I quadrupled it b/c we eat it so much.

Pancake mix
12 cups whole wheat flour
3/4 cups sugar
4 cups powder milk
2 tablespoons salt
3/4 cupsbaking powder

Mix together
To used, measure 1 1/2 cups mix, one cup milk, whey or water, one egg, and two tablespoons cooking oil.
