Breakfast ideas: Alternatives to extruded cereals

I frequently do the flaxmeal pancakes that someone posted a while back. I use that for other things that are bread related and leave out the sweetener (Stevia in my case).

We like fried mush in the winter. Also cut a circle into a slice of bread. Fry the bread in butter or bacon grease with an egg broken into the hole. Can be sunny side up or over easy.

Bob's Red Mill has a great hot cereal that is a mixture of grains. I add raisins or other dried fruits to the water then add the cereal when the water is boiling.

Also you can make your own "grape nuts" type cold cereal.
3 cups graham or whole wheat flour
1/2 cup wheat germ
1/2 cup brown sugar
2 cups sour milk or buttermilk
1 teaspoon baking soda
pinch salt
Beat until smooth, spread on cookie sheets and bake at 350*F for 25-30 minutes.
While still warm break into chunks and grate.
Crisp in oven for 20-30 minutes at 250*F and store in airtight container.

I love baked oatmeal. Steel cut oats, soaked overnight. Instant oats KILL my blood sugar.

When I'm working out of the house, I make muffin tin quiche. They freeze nicely so I can heat them and go.

Anyone have good granola recipes? :D

I make that granola recipe that's around here somewhere. It's soaked overnight in kefir, butter and coconut oil. Then sweetened with honey and maple syrup. Add-ins are pretty flexible and it's yummy!!

do you have that recipe???

I wanted to add to cereal alternatives.

I think someone above mentioned properly soaked oats. We eat a hot cereal for breakfast 5-6 days out of the week. We alternate between oats, millet, buckwheat, and amaranth. The cost of buckwheat and amaranth have done up so much that we mostly use oats and millet now.

We soak overnight, or a little longer if we remember to get it started earlier in the day. To the cereal and the water we add cultured buttermilk. I may try whey or kefir in the near future now that we have goats in milk. Or may culture buttermilk myself.

These cook up rather quickly in the morning - usually one of my kids do the cereal cooking. Once in the bowl we add a little coconut oil, cinnomon, sometimes ground flax seed, stevia and milk. It keeps hungry kiddos going throughout the morning.

Breakfasts at our place:

Oats soaked overnight, then cooked up and eaten with a bit of maple syrup and milk or cream.

Smoothies made with banana, berries, kefir, dribble of melted coconut oil, and ground flaxseed. We substitute Peaches or apricots or add to the berries when we are in summer fruit. I have thrown in a tablespoon or two of nut butter as well, for a little more protein.

Scrambled eggs and fried leftover potatoes, sometimes with bacon or ham.

Whole wheat Pancakes or waffles buttermilk, or now that we have it, kefir; served with yogurt and maple or berry syrup.

Potato pancakes (grated potatoes, egg, green onions, bit of flour and baking powder) served with apple sauce and sour cream.

Home-made granola or meusli with milk.

Toasted home-made whole-wheat bread with natural peanut butter and home-made jam.

You can make french toast, waffles and pancakes ahead and freeze them. They'll last for about a month for quick fix.

We've frozen waffles on purpose, and occasionally frozen pancakes when we had leftovers, but I never thought of freezing French toast. Although we don't make it that often, thanks for the suggestion--maybe we'll have some this weekend!
