OMG, I guess I should have subscribed to my own question.

Thank you all so much for your replies. I went and picked up about 20 pounds today. It cost almost nothing. They looked good, small to medium sized brown skinned onions.

My plan was to fill a wood crate and stick them in my new cupboard under the stairs. Next to my cushaw and canned goods. :idunno

I like all of the ideas. I think the caramelizing and canning might suit us the best.

Farmerlor....Do you pressure can those?? If so what pressure for how long?

Wifezilla please post your favorite French onion soup recipe. I would love to try it.

Free, Onion wine???? My husband already thinks I am nuts. Post the recipe I'll give it a go.

I guess I am going back tomorrow for more.

The store was a Food 4 Less which I think for most of you might be Krogers. Check this weeks add.

I do pressure can them but then I pressure can most everything except jellies and jams and fruit. I would imagine that they could be bwb'd I just never have. I pressure can my onions for 20 minutes should be at 10 pounds sea level but I'm at 6800 feet.

I tend to wing it but this is pretty much what I do. The key is to properly caramelize those onions. Once you get that down, the rest is just a matter of personal preference. Oh, and use at least a little wine. It really rounds out the flavor.

I vote to dehydrate!!

I run mine through the food processor to chop them all fine and dehydrate them until crunchy. They work GREAT!!

I weighed what I bought today. It was actually under 20 lbs. So I will definitely go back again. I think I will try to do a bit of everything.

Soup, dehydrate, as well as some soups. Love it all. Thanks!

I forgot to mention that if you dehydrate do it outdoors! The first time I did it in the house and we left for the day. When we came back the whole house would make you cry!! :lol:

Thanks for the info on canning them, farmerlor. I am just getting the hang of pressure canning. Never thought about canned onions!

I have done onions in the house before never had that problem. I am more worried about those banana peppers I am drying right now. Should those go someplace all by themselves???

I just did mine in the kitchen. The banana peppers smelled good while they were drying.

I'd be careful of that... onions really do store better in small mesh bags that are *hung*. If you do want them in crates/boxes, I recommend a larger number of smaller containers each of which is not fully filled with onions and then you stack them. IME if you do not allow VERY AMPLE air circulation around ALL of the onions, they get nasty faster (sometimes real fast)
