Good Morning ALL!!
Hope y'all had a wonderful blessed weekend. Last night our dinner was HOMEMADE Lasagna with Cheesy Garlic Bread and regular Garlic Bread. I had to do both loaves seeing how FH had promised a couple (more like 5) that he would bring them in lunches today and that's what he did. We have a FULL pan of lasagna leftover and NO bread which is good seeing how we don't need the bread with the noodles.
Sorry I didn't have coffee for everyone this AM, only had enough to make mine and FH cups this AM but don't no one fret there will be a pot tomorrow morning.
I made "lasagna" last night too. More like a baked pasta casserole. I tried tofu "ricotta" because it's lower calorie and much less saturated fat. (No, saturated fat isn't categorically unhealthy but I'm a lucky one that does better with low saturated fat - 2.5% of calories from saturated fat, versus the recommended 10%). I used chickpea flour pasta. It wasn't vegetarian - there was bone broth in my tomato sauce and I put 2 T parmesan on top. No one would call it "good" but it's edible. Low-calorie, low-fat, high protein, high fiber, grain-free/gluten-free. Probably not diabetic-friendly at 16 grams carbs/serving. IDK, maybe? only 0.4 grams starch per serving, versus 15 grams/serving for a typical homemade beef lasagna. @FarmerJamie ? @frustratedearthmother ?

DH baked pizza from scratch. He didn't make my favorite cheesy garlic bread. Bittersweet. I'm happy he has learned to not stick food in my face, but was sad to say no when he asked. Homemade pizza means I don't have to cook today. 😄

Sounds like it would be okay once in a while. Instead of pasta, I use thin zucchini or eggplant slices. I miss real pasta

Not terrible at 16 grams of carbs. DH does better if he combines his carbs with some fat. The weird thing about diabetes is that it's very personal and individualized. DH can eat beans - no problem, popcorn no problem, but even a couple bites of rice would shoot him through the roof. He can eat an apple but absolutely no bananas or grapes.

WE do like FJ and generally use thinly sliced zucchini for lasagna. Pretty darn tasty!

Medium rare would look and taste fine. Raw enough for vet to bring it back to life with worcestershire sauce. Maybe with a plain bake potatoe with a bit of butter and salt or just a few French fries. Yeap! Looking really good so far! 😆 🤣
