Shred it into a raw salad. We love it with carrots, cabbage, peppers, onions, etc. Then top with your favorite salad dressing.

Also great made into pancakes with a couple eggs, something bready (like crackers, bran, germ), some cheese, onions, salt and pepper, then pan fried in a smidgen of oil or butter.

Here's another good way to enjoy it.

shred it, along with some carrots, potatoes, onion - sprinkle with some indian spice mix like a powdered curry. Then make it in a batter, fry it in little clumps. Yum.

I'd be more exact, but I rarely use a recipe, so everything is by feel.

This is a recipe for zucchini from the 1953 edition of Joy of Cooking. Everybody (with one exception) for whom I have made it likes it, even those who don't like zucchini. (The one exception is my DH, who not only doesn't like zucchini, he also won't eat cheese! Poor, deluded man :D). It should be equally good with other summer squash. I usually use both more sour cream, and more cheese

For 4 servings -

Cut 3 medium sized zucchini into smallish pieces; simmer them in a small amount of water until tender. Drain, and shake pan over the hot burner to evaporate the rest of the water.
Combine 1/4 c, sour cream, 1 Tbls butter, 1 Tbls grated cheese, 1/2 tsp salt, 1/8 tsp paprika. Stir this mixture over low heat till the cheese is melted. Remove from heat, and stir in:
1 beaten egg yolk
1 Tbls chopped chives
Add the zucchini. Place the mixture in a baking dish, and top with bread crumbs, and dot with butter. Sprinkle with grated cheese. Brown it in a 375* oven, or under a broiler.

Why not? Remember pumpkin is a squash. So pumpkin pie IS squash pie. ;) :p :drool

I don't like pumpkin pie either :hu :lol: But it is indeed a squash so that WOULD be squash pie...ew. Kinda fnny when I think about it like that though. i may try it, just so long as I can get it past the other two until they taste it. There is always that stupid darn question of "What is it?" though. I don't lie, so getting past that point is the key in my kitchen ;)

No need to lie - just get creative!! Think about such recipes as Shoo Fly Pie and MO pie. ;) Come up with a catchy label and they will eat it. It is all about marketing. :lol:

We eat our yellow squash and zucchini raw (don't like them cooked). So here's what I do with my extra summer squashes:

SHRED: place 1/2 cup shredded squash/zuke in snack size baggies. Place enough of these baggies in a quart size freezer baggie, mark and freeze. I use these for zucchini bread that I give away for holidays.

DRY: cut into rounds, dehydrate until crisp. Store in a glass jar, well-marked. Some I store as is, and some I grind into powder. We use the discs like potato chips for dipping. The powder I "sneak" into foods like spaghetti sauce, mac n cheese (yellow squash), etc. Helps boost vitamin content.
