I'm glad everyone liked it. You just can't go wrong with cheese and fresh veggies. :drool

I feel more confident in serving it to my brood now :D

I'm also thinking of using a buttered crumb topping alternately with the cheese topping. More variety that way LOL
Yeah if mine will eat it, most anybody will. DD hates squash in general and she loved it. She ate all the would be leftovers ;) I call that approval :D

I saute it with onion and herbs and garlic and serve it with pasta and an egg yolk. Squash carbonara. Yum.

cut in spears, coat in olive oil, grill.

grate and use instead of carrot in carrot cake/zuchhini bread, etc

cut in spears, coat in bread crumbs, put in pan that's been brushed with olive oil and bake at 350 until tender (my kids love these) :D

I have a recipe for mock apple pie that uses the summer squash, but can't find it right now - seriously, totally faked everyone out that it wasn't apple. :rolleyes:

cut into discs, pat dry on a paper towel, dip into a batter, and fry until batter is nicely browned. Salt. I :love fried zucchini and that's about what summer squash is. (I use them interchangably.) Could cut them into spears and do this too.

cut into spears and let the kids snack on them as cut up veggies.

use your favorite dill pickle recipe and use zucchini/squash instead. My kids still don't believe me that I did this last year. (the cold pack recipes work the best for this)

We use crookneck and zucchini interchangeably here too.
Shred it and add it to other recipes (like carrot cake)
Use it instead of other veggies (beets in chocolate beet cake)
Make pickles
My sister makes strawberry jam in winter (strawberry jello and shredded summer squash, no strawberries at all)

Be creative and have fun with it! :D

WOW folks...and I have just spent all this time frying it :th I may try to fake em out with the strawberry jam and apple pie, just don't know if I could pull off the brownies. I'll have to wait until DD isn't home...she'd snitch me out to her daddy :lol: he is one of those that won't touch it if he knows what it is...that way about deer meat, but if he *thinks* it is beef, he swears it's delicious :lol: That KILLS me, and I get him almost every time ;)

Had squash this weekend, this is how I usually do it.

Fry up 4 or 5 pieces of bacon, then leave 2-3 tablespoons of bacon grease in the skillet. Add about a cup of chicken broth, then add about a cup of fresh green beans, salt and pepper. Let the green beans get about halfway done, then add cubed squash plus a sweet onion, more salt and pepper, plus a pinch of cayenne and some garlic. Simmer until the squash is just cooked, not mushy. Depending on how much squash you use, you may have to add more chicken stock. Serve with the bacon crumbled over the top.

I also fix the squash casserole a lot. Very yummy!

Just be sure and save some to blanch and freeze for winter!

I LOVE little bits of crookneck squash sauteed and added to my breakfast omelets! :drool

Grate it, and pack it 4 cups at at time into freezer zip locks. Double bag to prevent leaks when thawing.
Use in casseroles and chocolate zucchini cake through the winter.
