Oh yeah!! DRYING I could do! I can sneak it in anything that way, and it can make soups and chilli thicker I really like that idea!!MyKidLuvsGreenEgz said:We eat our yellow squash and zucchini raw (don't like them cooked). So here's what I do with my extra summer squashes:
SHRED: place 1/2 cup shredded squash/zuke in snack size baggies. Place enough of these baggies in a quart size freezer baggie, mark and freeze. I use these for zucchini bread that I give away for holidays.
DRY: cut into rounds, dehydrate until crisp. Store in a glass jar, well-marked. Some I store as is, and some I grind into powder. We use the discs like potato chips for dipping. The powder I "sneak" into foods like spaghetti sauce, mac n cheese (yellow squash), etc. Helps boost vitamin content.
