So you know why so many old Southern dishes call for 'salt pork', 'fat back', 'pig belly' or bacon as a flavor element.
Our most popular Fish House posted this on their doors and menus "NOTE All deep frying and most pan frying is done in Natural Lard/animal fat. Upon request we will pan fry your order in olive oil. For lower fat items check our broiled, baked or poached offerings. Enjoy your meal!" According to our local paper sales increased by 20%.

~gd -yes, that is one reason I fell in love with KY, totally different food than I grew up with in Montana!

-Got 1/2 of the fat rendered into lard. Made 3 qts plus.
-Made fresh bread for MyT Man and I think I finally found a recipe that he will eat homemade rather than that white stuff he claimed was the only thing he could ever have for bread from the store!!!
-Pie crust and rhubarb dethawing for tomorrow.
-Finances attended to.
-Almost all of my outdoor chores done (trimming all fencelines, cleaning out front garden bed, trimming hedge, trimming arbor, spraying fenceline, and cleaning said mess up) Just need to clean out back garden beds, plant fall lettuce in pots, and clean up one corner of the fence that has poison ivy and respray.
-Grapes picked, cleaned and in the dehydrator
-cabbage and brussels sprouts harvested and cabbage shredded in the fridge, ready to go
-gave up on the menu planning in my journal because it's taking a lot of time and I was starting to make way too much food. I'm getting better about just thinking through every night what I need to do for the next couple of days and that is working much better.

I had hoped to have everything spic and span inside the house as well by now but I had an emergency call to babysit Grandma yesterday. I had 15 minutes notice to go sit with her for 5 hours. Glad I can help a neighbor out.

You spent all day building a strong body and increasing your workforce and yet you say you were not productive? I think you did a LOT!

Quail -that was my whole weekend -three days worth! No way could I get all that done in one day.

I had listed my crock on Craigslist because I wasn't have much luck fermenting with it. It didn't have the weights and I didn't have the right size thing to keep all the floaties down. I switched to fermenting in a gallon jar because that was easier. I loved the crock because I love old things but if it's not useful in my life right now, it's got to go. I had two calls on it and when MyT Man got home from work last weekend, he said don't sell your crock yet.

A guy in the paint department asked him if he knew of anyone who could use some weights to go in an old crock. He'd found some somewhere but didn't have a crock to put them in. MyT Man said he thought he knew of someone but what was Tom asking for a price? He said, well, I don't know what they're worth, who do you know? MyT Man told him it was me and he said, well I've heard your wife makes a mean peach pie and I drool over them every time you bring them and the other Tom brags about how he has helped you with a couple of plumbing projects in exchange for blackberry pie. Why don't we call it a pie and call it even!

I just called him and he said he'd take anything as long as it was pie this weekend. :celebrate :woot
