I'm swooning over the coffee gouda I got at the farmers market this morning. I haven't decided what I'm going to do with it though.

Put some of the cheese in with scrambled eggs for breakfast this morning. Yummy!

This was a weekend of rescuing I guess. I was able to rescue a friend who was having car problems by talking to her on the phone and calming her down and getting her to drive safely home. Then I'm rescuing her with a rental car because she doesn't have a credit card. She'll pay me cash, I'll rent the car, and she'll get added as an additional driver. Then I "rescued" a stray dog that was wandering through our yard this morning. I had to go babysit the neighbors so I chained him up in the front yard after feeding him. Made sure he had shelter and a bucket of water. Came home and found a note on the door thanking me for holding their dog.

Then I was given a small job today of babysitting Grandma for awhile so the neighbors could go spend the weekend on the River. Their daughter was able to take over babysitting for the rest of the time. Then I was also given a heads up on a potential job of someone who might hire me to disburse an estate. The family has gone through and taken everything so they will pay me an hourly rate to catalog what is remaining, research anything of potential value, and make recommendations as to the disbursal (e-bay, CL, auction, garage sale, or dealer). Hurray!!! Getting paid to do something I love and it would be setting my own hours so I would be able to do nights/ weekends/ Mondays.

To top the weekend off, I got 6 eggs today! I'd been getting four almost every day quite consistently for awhile. I'm off to indulge in a nap and then I've got to hit the kitchen and get the week's menu whipped into shape!

Sounds like you have had a great weekend.

And all those "rescues" you were truly a blessing in each case.

the new job sounds very cool, something I would love to do also.:celebrate

Thanks Deb! I hope so. Tomorrow is deep cleaning the entire house to get it market ready... Not my favorite thing in the world to do.

Some of the following information is somewhat personal but I share it in hopes that it may help someone else or encourage them in their health.

Had my second visit with the Naturopath yesterday. Good news is I don't have a leaky gut! She was incredibly pleased with the progress on my hormones and adrenals. 3 more months of continued treatment on that. I've actually lost 1/2 " on my hips/ thighs and 1" in the bust :/. I also don't have to pluck the little black hairs that were growing under my chin anymore! I am also up to having two regular BM per day. This has been a huge improvement! My energy and brain power are still variable but I'm seeing improvement and glimmers of the person I remember being!

One of my really bad brain moments this month was I went in to the bank to order checks. When I left, I couldn't find my keys and the bank was getting ready to close. I asked them to give me five minutes in case they weren't in my car, I could go back in and look for them. So I went out to the car... and found that I had left the keys... in the ignition, with the engine still running. I just sat there and cried I felt so stupid. Anyway, maybe some of you out there can relate.

The bad news was something is still going on in my gut and I have very low immunity. One of my tests showed I was supposed to have 450-600 units of x and mine didn't even show up on the chart. So, I'm taking crazy amounts of probiotics and collostrum and I'm also being wormed :/. She thought perhaps with my super low immunity I may have picked up something from the chickens.

She also went through the results of my allergy tests. The good thing is there aren't many allergies... The bad news is they're almost all dairy :barnie. You know my favorite food is cheese, right? Oh, and who can be allergic to goat milk? For real???

So here's my allergy list: bananas, kidney beans, buttermilk, cassin, yogurt, American cheese, goat's milk, mozz. cheese, parm. cheese, swiss cheese, whey, cinnamon, oregano, quinoa, safflower oil and white mushrooms.

So sad on the cheese, I cleaned out the fridge and said goodbye to my mozzarella, parmesan, blue, coffee gouda, and raw sharp cheddar. I have a fellow foodie friend that volunteered to 'babysit' them for me! She's having tough times right now so I'm glad they're going to be appreciated!

I am really blessed though because I don't have severe grain allergies or allergic to gluten or some of the other crazy allergies out there. For that I am thankful. I'm going to have to check out BBH's menu thread from awhile back.

My biggest challenge is going to be finding a substitute for white creamy goodness -like what will I put on my tacos instead of sour cream? What will I do with no butter? If I can solve those... I'm home free!

My pig fat came My pig fat came!!!! :weee :celebrate I've been waiting over a month for this! I'm rendering lard today!!! So excited. I used a little piece of the fat last night in my cast iron skillet before browning some stew meat and it was great! It smells so clean. I got 1/2 of what he had from 1 pig. I didn't weigh it yet but I'd guess 20 lbs or so?
