What a nice day. Weather has cleared somewhat. No rain, but just enough clouds and breeze to keep things relatively cool. My daughter lives 5 hours away but we had a nice chat early this morning with grandkiddos chiming in whenever they could. My son came by to look at a few things that need his magic touch. Sure enough whatever he touches is miraculously transformed into a well-behaved machine, lol. I think engines are afraid of him so they are always on his best behavior if he's around.

We took lunch to DH's mom. I hadn't seen her in awhile even though she lives right across the street from the college. So, it was nice to see the only mother figure I have left. Thought a lot about my mom today. Wish I could snap my fingers and change all she went through - but I don't have that superpower.

Yard/garden/pasture - everything is totally sloppy again. My poor goats...I hate that they have to deal with this. I remember the years that we actually had droughts - they were super healthy, never needed worming and thrived. Ya'll forgive me - but I'm praying for a slight drought. (Notice I said "slight.")

Did a little goat maintenance today. They get their Replamin on weekends - and they love it. I don't have to give it to them - they will take it away from me if they could!

Made some bread this afternoon and changed the basic recipe a bit. I added hemp hearts and chia seeds to the dough. It gave the bread a bit more dense texture and a more … I dunno...rustic taste. Really, really tasty. I was afraid that it wouldn't rise because it was so dense so I baked 8 mini-loaves and 9 big rolls. Worked perfectly. In my quest to reduce my LDL's I'm including a lot more fiber in my diet so that's my excuse to eat this bread...albeit sparingly. It's wonderful drizzled with some nice quality olive oil. :drool

I like the denser textures and lot of seeds. Dave's is a brand I buy -- but, I really eat very little bread :idunno In fact, I sometimes buy a loaf and put it in the freezer, using a slice or 2 at a time. Probably because I eat few sandwiches -- just how it has evolved. Cooking for one, I don't do a lot of "big" chunks of meat anymore -- unless I have plans for it, soup, BBQ, etc.

The smaller loaves make a good freezer size :D Does DH eat any of it? He's gotta be low carb, right?

DH is low-carb but he can eat a little. The recipe is based on a bran cereal - I use Fiber One. Adding the hemp and chia really increased the fiber content. The high fiber helps slow down the carb absorption so that it doesn't spike his blood sugar.

I already put most of it in the freezer to be doled out sparingly. I made sure to put it in the freezer in the garage so that I have to want it badly enough to walk alllll the way out there to get it, lol.

FEM, I found an orange dreamsicle cheesecake recipe I low carbed. My wife, who is meh about the dreamsicle bars, really liked it. I am going to try a lemon or strawberry version next. Let me know if you are interested in the recipe

Oh!! Raspberry dreamsicle. :drool I remember when there were ice cream trucks that drove the neighborhoods. :D
