Sorry, somehow your second email didn't show up until after my last one. I'm looking for a spread, for the occasional GF waffle or pancake. Sounds like coconut oil is a good choice.
coconut oil doesn't really have a taste. Might sound gross, but my son likes bacon fat as a spread for when he has things like that, of course, bacon has to be served alongside .

Just thought of something! Chicken fat, rendered and strained, has a very nice delicate flavor. My grandmother called it *%$#@ butter. Edited because it might be a slur. Probably is. She also called the chicken's tail "the Pope's nose." She was a practicing Catholic, so I'm not sure if that was a slur, too! :p

It was also the name given to the tail lights on certain cars I think. I'd have to verify with DH who knows these important things! ;)
Right now he just needs to think there's a butter like substance on there. In reality I should be able to wean him off that idea and just use a little maple syrup. :p

I grew up with a light schmear of peanut butter on my waffles....in case you want to try something different.

So how did the last 24 hours go?

So far so good. We are on vacation from school which helps. The most noticable difference is that DS's appetite has increased and it's not because he's not eating. I think he's not getting a bloated feeling after he eats. He will frequently eat a few bites at a meal and claim he's full. Now he's cleaning his plate and even asking for more. He's been content with the healthy snacks. He's tried a few new foods or things he's said he didn't like in the past. I've been writing down what he eats and showing him how he's eating a colorful diet from the different food groups like the doctor advised. Happy mommy so far! His teacher is on board. I need to write a letter to school explaining he can't have anything that didn't come from home.

So nice to see promising results so quickly. Sounds like you are on the right track. I just hope it is only the grains and not the dairy, which is so good for growing kids. Although it is tough to live without grains in today's world, until you get used to it. For a kid, though, it is tougher because they go to friend's houses and the friend's just don't get it.

I've had adults think I was just being fussy and give me stuff that made me sick.
