Oh, I know really! We put up about 15 bags of ground meat last night, cooked some for dinner. I have a tenderloin in the fridge marinating in some olive oil and Emeril's Bayou Blast. We'll see how it is later.
I have got to get a grinder! My mom sent her big mixer with the grinder attachment up here with my granny last night and we were done in no time. They came up to get my DD cause for the last 2 days she's been on the phone with Granny telling her she wanted to come and stay with her. Then last night she says she doesn't want to go after they drive 2 1/2 hrs to get her only to turn around and drive another 2 1/2 hrs back in the same night. I packed her bags and told her that she was absolutely going.
Same thing happened with my son yesterday morning. Chad had to go meet with some landowners in another county (he got 1200 acres to goose hunt, btw) and DS ran out of the house screaming that he wanted to go with him. He never wants to go without me so I demanded that Chad take him. We got him dressed and packed him some snacks and muck boots and then he says no he wants to stay here. Now by this time my husband is going to be late. I marched Tyler's little butt out to the car and told him he was going. I spent all day lecturing my children on commitment and following through.
Tyler was glad he went, he and Daddy had a wonderful day. They got to see a dairy calf being born! All that fresh air and walking around yesterday has done him in though. He woke up past 9 this morning with the sniffles and all he wants to do is lay on the couch and suck his thumb. I have some work to do outside later today so I'll get him up and out in a little while.
Oh, I almost forgot, we pulled out our first 6 broilers to process last night and put them in a separate tractor with water and fresh grass. We'll see how it goes! Tyler was so cute trying to pick out the biggest ones, he tried to pick one up and he said "I can't, it's too heavy".
Good luck on your processing! Make sure that you allow them to chill for a couple of days BEFORE freezing them to allow them time to go through rigor mortis and get nice and tender.
One of our neighbors came and watched us with his daughter. She couldn't believe I was able to grab them by the feet two at a time and bring them across the yard to do the deed. We didn't do any of these whole, we skinned them and cut them in pieces. I have two big pots in the fridge right now that are full! I'm soaking them in salt water in the fridge until tomorrow night or Wednesday morning before I freeze them. Chad forgot to stop and get foodsaver bags for me tonight.
It wasn't so bad, I think Chad was surprised at how easily they skinned and how big the breasts were. Really pretty meat on these birds. I'm going to pull out 6 more tomorrow evening so we can put them up Wednesday night. We have 23 left to do. Whew, gonna be a long week!
