AMARETTO COCOA MIX
10 1/2 C. non-fat dry milk
4 C. confectioners' sugar
2(8 oz) jars Amaretto flavored powdered creamer
3 1/2 C. nestle's quick
2 3/4 C. non dairy powdered creamer
1/2 tsp salt

Combine all ingredients & divide between 8 pint jars.

Combine 3 heaping TBS of mix to 1 cup hot water or milk.


CAFE AU LAIT COFFEE MIX
1 1/2 C. nondairy creamer
1/2 C. packed brown sugar
1/2 C. instant coffee
dash of salt
*For sugar substitute use 10 tsp for 1 C. sugar
**You can also use decaf instant coffee.
Put all ingredients in a blender or fod processor, blend until powder consistency. Put mixture into an attractive glass jar with a lid. To give as a gift, include a gift card with the following: mix 1/3 C. with 2/3 C. boiling water for individual servings.

CAFE VIENNA COFFEE MIX
1 1/3 C. granulated sugar
1 C. instant coffee (may use decaf too)
1 1/3 C. nonfat dry milk
1 tsp cinnamon
Put all ingredients into a blender or processor; blend until powder consistency.
Mix 2Tbs with 6 ozs coffee.

Glad you liked them :) My friend served those potatoes with chicken breasts dipped in Montreal seasoning and then crushed pistachios, fried in coconut oil and that broccoli-bacon-raisin-sunflower seed salad. Oh, man--talk about gluttony! What a meal!

CHILI POWDER
1/4 C. ground Ca. or NM chilies
1 T. ground cumin
1-2 tsp cayenne
2 tsp dried oregano
2 tsp onion salt
1 tsp garlic powder
In a 1/3- 1/2 cup tall narrow clear jar layer the ingredients contrasting light layers with dark layers. To use shake jar or stir spices until blended. Use to season cooked dried beans, soups & stews or rub into meats, seafood or poultry to pan fry, roast or barbeque.


CAPPUCCINO MIX IN A JAR
1 C. powdered non dairy creamer
1 C. powdered chocolate drink mix
2/3 C. instant coffee granules
1/2 C. granulated sugar
3/4 tsp ground cinnamon
3/8 tsp ground nutmeg
Have ready 2 12oz canning jars. Put the instant coffee into a food processor, and process to a fine powder. In a large bowl, combine creamer, chocolate mix, instant coffee, sugar, cinnamon & nutmeg. Stir together until well mixed. Spoon into jars. Mix 3 TBS of powder with 6oz hot water.(16 servings).


APPLE MUFFIN MIX
2 C. self rising flour
1/2 C. granulated sugar
1/4 C. brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1 C. chopped dried apple
1 egg
3/4 C. milk
1/4 C. oil
Preheat oven to 400. Combine all dry ingredients in a medium bowl, add the remaining ingredients stirring until just moistened. Fill greased muffing cups 3/4 full. Bake for 15-18 mins, or until golden brown.


HONEY SURPRISE
1 jar honey
1 cinnamon stick
2 whole cloves
2 whole allspice
Put honey into an attractive jar. Add cinnamon, cloves & allspice. Set container in a bowl of hot water for 20 mins for flavors to develop. Put lid on jar. This makes an excellent gift for honey lovers(or tea lovers). It is delicious on muffins & bagels.


PUMPKIN PIE COFFEE CREAMER
4 tsp ground cinnamon
2 ts ground ginger
2 tsp ground nutmeg
1 tsp ground cloves
1 tsp alspice(optional)
1 C. non dairy creamer
Combine well.
RANCH DRESSING & DIP MIX
This versatile mix can be used to make a dressing for salads, a dip for fresh veggies or a topping for bake potatoes.

1 1/2 T. dried parsley
1/2 T dried chives
1/4T dried tarragon
1/2 T lemon pepper
1 T salt
1/4 T oregano
1/2 T garlic powder
In a medium bowl, combine all the ingredients. Store in an air tight container.
Dressing: makes 1 Cup
1/2 C. mayo
1/2 C. buttermilk
1T mix
In a large bowl whisk together the mayo, buttermilk & mix. Refrigerate for one hour before serving.
Dip: makes 2 cups
2 T mix
1 C. mayo
1 C. sour cream or yogurt
Combine the mix with mayo & sour cream. Refrigerate for 2 hrs before serving.

I made the taco seasoning mix just a few minutes ago!! :D

I started the fajita mix, but ran out of chilli powder, so I will finish it when I get some more at the store

Does anyone know if there is a substitute for cinnamon? My son is allergic to it.

Also, is there a recipe for homemade granola bars? :D :D :D :D :D

My dh is severely allergic to ginger root. Now, we haven't watched tv for 7 years, so this was quite a while back. But Sara Moulton used to do a show called Cooking Live (on Food Network) where you prepare the same dinner at home that she is making on the set. A portion of the show was call in for questions.

I asked if there was something I could use in place of ginger root. Sara pretty much said you have play with other spices and herbs until you find one that works and gives you a good flavor.

So for the cinnamon, I would say you can leave it out or substitute nutmeg (half the amount in the recipe). The taste won't be the same, but nutmeg is what I use when I am out of cinnamon. HTH

on the nutmeg, if there is already nutmeg called for in the recipe would substituting half nutmeg for the cinnamon be too much nutmeg, or is it just a go by taste sort of thing?

Ohhh, the pumpkin pie creamer looks yummy. I know it's supposed to be a dry mix, but I wonder if there's a way to use half and half instead? I get addicted to the Coffee Mate one, but it's seasonal! It reminds me of the Pumpkin Spice Latte at Starbucks.

HP, I think I would mix the dry ingredients and keep them in the pantry.

Then when you want to use it, add some half and half to a tsp of the dry mix and see if it needs tweaking for flavor. Then write down what portion of mix you used to portion of half and half, so you can duplicate it in future.

Unless you want to mix it all up and use it within a month.

Post here and let us know how it turns out.

Depending on what you are making, I think I would just leave out the cinnamon, OKM.
