If you really don't like hard boiled eggs, but like devilled eggs, just make egg salad--mash eggs, chop up a dill pickle and add mayo. Easy peasy.

With homemade ice cream, if you add just 1T. vodka to your mix, you can't taste it, and it prevents it from freezing rock hard, per Alton Brown. I tried it and it works!

I should do that. I do it for lunch quite often, without bread. Some mustard and hot sauce and mmmmmmmmm!

Ice cream: I freeze it in cups with popsicle sticks so it can be easily eaten later. I put the pops in a big ziploc once frozen.

I've gotta make ice cream sandwiches one day....not low carb, though....

Um, I bought flax meal..... I had yogurt one day. Today I had some beef jerky from the farmers' market. Other than that I, um, hmmm, didn't eat breakfast...

When we were staying with family, I just skipped breakfast most of the time. It was just easier :rolleyes:

Beef jerky sounds good, but becareful that your caloric intake doesn't drop too much!

I need to try those flax pancakes for my kids, but I doubt that they would like them cuz they are so darn picky!

I'm going to make the pancakes tomorrow. It's supposed to be a little cooler and drier and it's SATURDAY!

I saw the naturopath today and fessed up. She was fine with it. She says I'm one of a couple dozen patients who told her they struggle with eating right in the summer. Not that there aren't great fresh veggies; it's the lack of routine and high temps!

This is me too. Although I eat breakfast at about 10ish, and usually lunch is skipped or eaten at about 3 ish, with supper (id eaaten) around 7ish. When the kids are in shool, there is a definate routine for breakfast/lunch/supper.

I like having a piece of meat with vegetables or fruit. The kids will have some kind of carbohydrate too and sometimes I do depending how I feel. This week we have been having 1/2 boneless chicken breast. Before that cold leftover roast beef. Sometimes we even have chicken livers. We alternate every couple days with eggs. That way you don't get tired of them. If you eat protein in the morning you won't crave carbohydrates as much.
