the best news is that he agreed to take pix start to finish when he does his 'winter pigs' in february! whoot! so we'll really have great instructions for everyone.

* MTNorth - check it out to see if i've answered your questions about the sequence. we use the bones all the time for soup and such so we left them. the bones left over from making the chops will be used for making broth - so my pork-n-beans will be extra delish!

but for now i'm wiped out. i finished up the liverwurst, bagged up a bunch of the ground meat..oh and had to make dinner and do chores after we got home from church late! geez..tomorrow is more of the same. its seriously going to take a week to get thru all the work! but we had our first pork dinner (the tenderloins) and it was wonderful! whoot!
here is a funny. i taught the dogs to tell the diff between the critters so i'll say 'where's the hens?" or 'where's the geese" and they go off in the right direction.
yesterday i said, hey Ti - where's the pigs? and he went directly to where the pigs heads were! ha! what a good dog...
thanks for posting your hog butchering experience. Are you considering making headcheese with the hogs heads. I love good headcheese. Almost as much as liverwurst.
