I agree!!! That was great!!! I liked the pic of the piggy heads :p Shoulda done it around Halloween, they would have made great centerpieces!!!

Great post, great info. Brings the whole thing down to layman's terms. I look forward to reading more. Shame on your garbage man. My Auntie butchers all her own meats now. Or at least used to. She always gave the yucky stuff to the chickens. Is that wrong?

ok everybody! i posted a NEW thread for the hog harvest - check it out! more details and i tried to answer some of the questions we got over here. also - i'm trying to get The Pig Man to chime in.. i know he's lurking on the site.

the best news is that he agreed to take pix start to finish when he does his 'winter pigs' in february! whoot! so we'll really have great instructions for everyone.

* Lori - you are hilarious with that centerpiece thing! hee hee hee to be truthful, we've been below freezing to those stupid heads have been sitting on the outside work table! everytime i walk by i spit in their eye (just kidding - i give them the finger instead)

* Free - check it out and put in any questions in the new thread - The Pig Man and i will add in FAQ later

* Tanks - yep hens can have just about anything - they will push each other down for the leavin's..

* MTNorth - check it out to see if i've answered your questions about the sequence. we use the bones all the time for soup and such so we left them. the bones left over from making the chops will be used for making broth - so my pork-n-beans will be extra delish!

* Dace you are hilarious!! hee hee hee

but for now i'm wiped out. i finished up the liverwurst, bagged up a bunch of the ground meat..oh and had to make dinner and do chores after we got home from church late! geez..tomorrow is more of the same. its seriously going to take a week to get thru all the work! but we had our first pork dinner (the tenderloins) and it was wonderful! whoot!

here is a funny. i taught the dogs to tell the diff between the critters so i'll say 'where's the hens?" or 'where's the geese" and they go off in the right direction.

yesterday i said, hey Ti - where's the pigs? and he went directly to where the pigs heads were! ha! what a good dog...

alright, its late. i'm out

thanks for posting your hog butchering experience. Are you considering making headcheese with the hogs heads. I love good headcheese. Almost as much as liverwurst.

nope on the headcheese.... i never could develop a taste for it. but the jowls will be smoked with the bacon we are going to do.

i had liverwurst for dessert last nite. its perfect for every occasion!

i KNOW! i never thought i'd be laying in bed dreaming of smoked jowl...but i do....

i was thinking of trying scapple as well..

Anyone read Angela's Ashes? Can't remember the author's name right now....a pig's head is featured in a chapter or two....
